BBQ Pork Quesadilla

These easy BBQ Pork Quesadillas are a twist on classic comfort food with tangy BBQ sauce and pulled pork stuffed between two flour tortillas and covered in ooey gooey cheese!

Ingredients

  • 2 Mission Organics Tortilla, Flour (any variety will work!)
  • 1 Tbsp Butter
  • 4 oz Pork (cooked)
  • 1 Tbsp BBQ sauce
  • 1 c Mexican cheddar cheese blend (shredded)
  • 2 Tbsp Red onion (diced)
  • ΒΌ c Roasted corn
  • 2 Tbsp Red pepper (diced)

Instructions

  1. Preheat skillet on medium heat.
  2. Toss pork in BBQ sauce.
  3. Add butter to skillet and let it melt over medium high heat.

  4. Place one tortilla in the skillet.

  5. Sprinkle half of the cheese over the bottom tortilla.

  6. Add pork, onions, red pepper and corn to tortilla distributing it evenly.

  7. Add the remaining cheese and place the second tortilla on top.
  8. Cook until cheese melts; about 2 minutes.

  9. Using a wide spatula, flip quesadilla and cook for 2 more minutes. 

  10. Garnish with sour cream and cilantro if desired.
