Pineapple Casserole

This easy Pineapple Casserole is a traditional southern recipe that makes the perfect side dish to go with ham at any pot luck or Easter dinner.

Ingredients

  • 1 cup Granulated sugar
  • 6 tablespoons Flour
  • 6 ounces Sharp cheddar shredded
  • 2 20-ounce cans Pineapple chunks drained, and 6 tablespoons pineapple juice reserved
  • 2 ounces RITZ cracker crumbs
  • 4 tablespoons Butter melted

Instructions

  • Preheat the oven to 350 degrees F.
  • Prepare a medium size (approximately 11x7 inch) casserole dish by greasing it with non-stick spray or butter
  • In a large bowl combine sugar, flour, and cheese. Toss together until they are well combined.
  • Drain the pineapple chunks making sure to reserve a small amount of liquid for the topping. Add the drained pineapple chunks to the cheese mixture and toss together until well combined.
  • In a separate small bowl combine the cracker crumbs, melted butter, and reserved pineapple juice and stir together until well combined.
  • Pour the pineapple mixture into the casserole dish and top with the cracker mixture.
  • Bake for 25-30 minutes until golden brown on top.
