Ingredients

  • ¼ cup Butter
  • 4 ounces Onion finely diced
  • 16 ounces Carrot finely chopped
  • 4 ounces Celery finely chopped
  • 2 cloves Garlic finely minced
  • ½ teaspoon Salt
  • ¼ teaspoon Pepper
  • 2 tablespoons Bisquick
  • 5 cups Chicken broth
  • 1 teaspoon Thyme finely chopped
  • 16 ounces Rotisserie chicken
  • 2 cups Bisquick
  • cup Whole milk

Instructions

  • Place butter in a large pot or Dutch oven and heat over medium-high heat.
  • Once the butter is melted, add the onion, carrot, and celery and cook for 5-7 minutes or until softened.
  • Add the garlic, thyme, salt, and pepper, and continue to cook for 1 minute.
  • Sprinkle the 2 tablespoons of Bisquick over the mixture and stir together with the onions, carrots, and celery.
  • Slowly pour in the broth, making sure to whisk the whole time so no clumps form.
  • Add the rotisserie chicken and continue to cook until the broth comes to a boil.
  • In a large bowl combine the 2 cups of Bisquick and 2/3 cup of whole milk and stir together until a dough forms.
  • Once the broth reaches a boil, drop spoonfuls of the dumpling mixture on top of the boiling soup.
  • Place a lid on the pot and reduce the heat to medium-low. Cook for 10 minutes.
  • Then remove the lid and continue cooking for an additional 10 minutes, or until the dumplings are cooked through.
  • Serve hot.
