Cheddar BBQ Chicken Foil Packet Meal

These easy Cheddar BBQ Chicken Foil Packets  are one of my favorite campfire dinner recipes. Cook them over a fire, on the grill, or in your oven for an easy BBQ chicken dinner.

Ingredients

  • 16 ounces Chicken Breast boneless, skinless, cubed
  • 4 ounces Cheddar Cheese shredded
  • 1 Red Bell Pepper large dice
  • 1 Green Bell Pepper large dice
  • 1/2 Red Onion thinly sliced
  • 2 ears Corn cut into 1/2 inch slices
  • 1/3 cup BBQ sauce

Instructions

Oven Instructions:

  • Preheat oven to 400 degrees F.
  • In a bowl toss cubed chicken breast and 1/2 of the BBQ together. 
  • Cut 4 sheets of aluminum foil large enough to wrap around the chicken and add-ins.
  • Place 4 ounces of the BBQ cubed chicken breast on each sheet of foil.
  • Divide the vegetables between each foil packet and fold up the foil sealing the ingredients tightly inside.  
  • Place foil packets on a baking sheet and bake for 20-25 minutes or until chicken is cooked through.
  • Open foil packets and sprinkle with cheese letting it melt before serving.

Grilling Instructions:

  • Heat grill.
  • In a bowl toss cubed chicken breast and 1/2 of the BBQ together. 
  • Cut 4 sheets of aluminum foil large enough to wrap around the chicken and add-ins.
  • Place 4 ounces of the BBQ cubed chicken breast on each sheet of foil.
  • Divide the vegetables between each foil packet and fold up the foil sealing the ingredients tightly inside.
  • Place foil packets on the grill and cook for 20-25 minutes or until chicken is cooked through.
  • Open foil packets and sprinkle with cheese letting it melt before serving.

Campfire Instructions

  • Build a campfire and let the fire to burn you have a bed of coals. Rake the coals to one side of the fire and flatten the pile out.
  • In a bowl toss cubed chicken breast and 1/2 of the BBQ together.
  • Cut 4 sheets of aluminum foil large enough to wrap around the chicken and add-ins.
  • Place 4 ounces of the BBQ cubed chicken breast on each sheet of foil.
  • Divide the vegetables between each foil packet and fold up the foil sealing the ingredients tightly inside.
  • Place the sealed foil packets on the bed of coals and cook for 30-35 minutes or until the chicken is cooked through.
  • Open foil packets and sprinkle with cheese letting it melt before serving.

Notes

Note: If you are concerned about cooking your food in aluminum place a piece of parchment paper on your foil, then place the food on the parchment paper. Now when you fold up your foil packet the parchment paper will make a barrier between the aluminum and your food but the aluminum on the outside will make it safe to cook over an open flame. Note: This is not required it is just an option.
