Coconut Lime Rice

Coconut lime rice is creamy, fluffy, and zesty. Make this easy jasmine rice side dish in one pot.

Ingredients

  • 2 cups Jasmine rice
  • 14 ounces Coconut Milk
  • 1.25 cups Water
  • 3 tablepsoons Fresh lime juice
  • 1 teaspoon Lime zest
  • ½ teaspoon Salt
  • ½ cup Finely chopped fresh cilantro

Instructions

  • Mix coconut milk, water, lime juice, lime zest and salt together in small pot. Bring to a boil over medium-high heat.
  • Add the rice to the boiling liquid, turn the heat down to low, and cover the pot with a lid. Continue to cook for 20 minutes. Do not open the lid during that time!
  • After 20 minutes move the rice off of the heat, remove the lid, and fluff the rice with a fork. Let it sit on the stove for 10 minutes.
  • Add the chopped cilantro and gently toss with the rice until well-mixed.
  • Serve warm.
