Mix coconut milk, water, lime juice, lime zest and salt together in small pot. Bring to a boil over medium-high heat.
Add the rice to the boiling liquid, turn the heat down to low, and cover the pot with a lid. Continue to cook for 20 minutes. Do not open the lid during that time!
After 20 minutes move the rice off of the heat, remove the lid, and fluff the rice with a fork. Let it sit on the stove for 10 minutes.
Add the chopped cilantro and gently toss with the rice until well-mixed.
