Easy Buffalo Chicken Nachos

Ingredients

  • 16 ounces Shredded rotisserie chicken
  • 4 ounces Cream cheese
  • 1/2 cup Frank’s Buffalo sauce
  • ½ cup Ranch dressing
  • 8 ounces Shredded cheddar cheese
  • Jalapenos optional
  • Green onions optional

Instructions

  • Preheat oven to 350 degrees F.
  • In a small microwave-safe bowl, combine the cream cheese and buffalo sauce. Microwave for 30 seconds and stir together. Continue to microwave and stir for 15-30 seconds at a time until the cream cheese is fully melted.
  • Add the Ranch dressing to the cream cheese mixture and stir.
  • Place the shredded chicken in a large bowl and pour the cream cheese mixture over it. Toss chicken until well coated.
  • Spread a layer of chips on a baking sheet.
  • Sprinkle 4 ounces of shredded cheddar cheese over the chips.
  • Layer the shredded rotisserie chicken on top of the chips.
  • Top with more chips and the remaining 4 ounces of cheddar cheese and jalapenos if you are using them.
  • Place in oven and bake for 15-20 minutes or until cheese is fully melted.
  • Remove from oven and top with a drizzle of ranch dressing and your favorite nacho toppings.
  • Serve warm.
