Place the onion and green olives in a food processor. Pulse until they are chopped into very small pieces. Remove them from the food processor and set aside.
Chop or crumble the blue cheese into small pieces.
Combine the mayonnaise, chopped onion, chopped green olives, blue cheese, and garlic powder in a large bowl. Stir until evenly mixed.
Add the buttermilk one tablespoon at a time, stirring after each addition, until the dip reaches a smooth, scoopable consistency.
Cover the bowl tightly and place it in the refrigerator to chill until ready to serve. For the best flavor, chill it for at least two hours.
Stir well before serving. Add a small splash of buttermilk if the dip needs to be thinned.
Serve cold with tortilla chips, crackers, pretzels, or fresh vegetables.
