Ingredients

  • 16 ounces Elbow macaroni
  • 2 cups Mayonnaise
  • 1/4 cup Whole milk
  • 1 tablespoon Rice vinegar
  • 1/2 teaspoon Kosher salt
  • 1 cup Grated carrot
  • ¼ cup Grated sweet onion
  • 1 bunch Green onions greens only, finely chopped

Instructions

  • Cook elbow macaroni according to package instructions. Make sure to salt your water with 2 teaspoons of salt for added flavor.
  • Once the pasta is al dente, drain the water and rinse pasta under cold water. Let the pasta drain thoroughly before proceeding to the next step.
  • Once drained add the cooked pasta, mayonnaise, milk, rice vinegar, salt, grated carrot, grated sweet onion, and green onion to a large bowl.
  • Gently toss together until the pasta is well coated.
  • Store in an airtight container in the refrigerator for at least 1 hour to let it chill before serving.
