Instructions
Preheat the oven to 350 degrees F.
Prepare a medium size (approximately 11x7 inch) casserole dish by greasing it with non-stick spray or butter
In a large bowl combine sugar, flour, and cheese. Toss together until they are well combined.
Drain the pineapple chunks making sure to reserve a small amount of liquid for the topping. Add the drained pineapple chunks to the cheese mixture and toss together until well combined.
In a separate small bowl combine the cracker crumbs, melted butter, and reserved pineapple juice and stir together until well combined.
Pour the pineapple mixture into the casserole dish and top with the cracker mixture.
