Ingredients

  • 1 can Black beans drained and rinsed
  • 1 can Corn drained
  • 1 can Diced tomatoes with green chilies
  • 1 teaspoon Cumin
  • ½ teaspoon Chili powder
  • Salt & pepper to taste
  • 3 cups Cooked rice
  • 1 cup Shredded cheddar cheese

Instructions

  • Heat a large skillet over medium high heat and add black beans, corn, diced tomatoes, and seasonings. Cook for 3-5 minutes, stirring to combine ingredients.
