One Pot Shrimp Linguine

One Pot Shrimp Linguine is a simple weeknight meal that takes minutes to make and minutes to clean up!
I have seen one pot meals on Pinterest for awhile now and I’ve always wondered if it was really that easy to make, and if the noodles really did cook right with all of the other ingredients. I mean I know Martha Stewart did it but I wasn’t sure it would turn out as well for me. The idea was great though, a complete meal cooked in one pot! Less to clean up after dinner…that always sounds good to me.

I saw a new pasta on the shelf, Barilla® Pronto™, it is made specifically for a one pan meal. You don’t even have to boil water! I have a great shrimp and spinach pasta that I thought would work as a one pot meal so I got the linguine, along with some fresh basil, fresh tomatoes, diced tomatoes, garlic, spinach, shrimp, and feta cheese.
The whole thing was so simple to make, I wish I had tried it sooner. I put the pasta, fresh tomatoes, diced tomatoes, fresh basil, and garlic in the pot and added 2 cups of water. Then I turned the burner on high and let everything cook until the water was absorbed by the noodles. I added the shrimp and spinach about 10 minutes before everything finished cooking. Shrimp and spinach are perfect for this recipe because they cook so quickly.
I served it all up family-style in a big bowl, and finished it with some crumbled feta cheese sprinkled over top. It was beautiful, fresh, and delicious! One pot meals where have you been all my life?! Not only did I get dinner on the table in about 15 minutes, it only took me 15 minutes to clean-up! I was able to snuggle up on the couch and watch a show with the kids before bedtime.
One Pot Shrimp Linguine
Ingredients
- 1 box Barilla® Pronto™ Linguine
- 1 lb Shrimp
- 1 pint Grape Tomatoes
- 1 c Fresh Basil
- 2 cloves fresh garlic
- 1 14.5 oz. can Diced Tomatoes
- 2 c Spinach
- 1 c Feta Cheese
- 2 c Water
- 2 tsp Salt
Instructions
- Place Barilla® Pronto™ pasta, fresh tomatoes, diced tomatoes, fresh basil, salt, and 2 cloves of garlic in a large skillet.
- Add 2 cups of water (or follow instructions on box if you are using less than the whole box).
- Cook over high heat.
- After 5 minutes add shrimp and spinach.
- Continue cooking until all of the liquid is absorbed and the shrimp is fully cooked.
- Finish with feta cheese and serve.

in the directions you mention 2 cloves of garlic, in the list in ingredients you don’t. Is the garlic minced, chopped or added whole? Can powder be used in place of fresh?
I will check that out but in the meantime you can add the garlic any way you like. We added it in whole pieces but sliced, diced or even powdered will work!
I made this for dinner tonight and it was great! But there are only 2 of us so do you think leftovers could be frozen?

Made the one pot shrimp linguine. Tasty BUT very dry. Some of the pasta stuck to the pot. Not sure 2 cups enough liquid please advise
We didn’t have that issue when we made it but if the pasta seems to be getting too dry you can always add more water as it is cooking. I would add it 1/4 c at a time and let that begin to cook away before adding anymore.
