These Leprechaun Cookies are a fun and easy dessert for St. Patrick’s Day!

St. Patrick’s Day is just around the corner and this weekend Melinda and I worked on a simple, but super cute, treat for her to send to school for her son’s class. These St. Patrick’s Day leprechaun cookies made with Nutter Butter cookies were what we came up with and I’ve got to admit I’m kind of in love.
What You Need to Make Leprechaun Cookies:
- Chocolate chips
- Orange Candy Melts
- Green Candy Melts
- Chocolate chips
- Sprinkles – I used these orange hearts for the nose and these round white sprinkles for the eyes. If you can’t find the hearts you can also use the orange round sprinkles from the same pack for the nose. Use green shamrock sprinkles for the hat. Alternately you could use candy eyes for the eyes, but these are a little bigger so they look slightly different.
- Black food coloring
How to Make Leprechaun Cookies:
- Fill a coffee mug 2/3 full of orange candy melts. Place in microwave and cook on high for 30 seconds. Remove and stir and then place back in microwave cooking 15 seconds at a time, stirring in between, until fully melted. You may have to do this more than once depending on how many cookies you make.
- Dip one end of the Nutter Butter in orange. Use a spoon to smear some up the sides of the cookie to create sideburns for the leprechaun.
- Lay the cookie on parchment paper to let the orange candy melt harden as you do the rest of your cookies.
- When the orange candy melt beards have cooled and hardened melt your green candy melts following the steps in #1.
- Dip the other end of each cookie into the melted green candy melts to make the hat.
- Lay them on parchment paper to let them cool and harden. I
- Spoon some of the melted green candy melts into a plastic sandwich baggie and snip the tip off of a corner. Pipe on a stripe of green candy melt across the bottom of each hat to create the brim of the hat.
- Melt chocolate chips in a separate coffee mug and spoon it into another sandwich baggie, snipping off the tip of one corner. Make a stripe of brown right above the stripe of green. This was the strap on his hat.
- Drop a green shamrock sprinkle onto the chocolate stripe.
- Place a small dot of chocolate where each eye will go and place a white circle sprinkle on it. Use a toothpick to add a tiny drop of black food coloring. Don’t use too much or it will bleed. You an also use candy eyes if you prefer but they are a little bigger.
- Place a small dot of chocolate where the nose will go and place an upside down orange heart sprinkle or an orange circle sprinkle on it.
That’s it! I know it sounds like a lot of work but if you set up a little assembly line it goes pretty quickly and they taste as good as they look! It’s a really fun little treat to make for St. Patrick’s Day and the kids and their friends loved them!
