White Chocolate Raspberry Puffs
These sweet, bite size, White Chocolate Raspberry Puffs are a simple dessert recipe that is perfect for the holidays!
As much as I love the holidays they are hectic! Grocery shopping, baking, making holiday dinners, entertaining my favorite kiddos, the list goes on and on. Fun, but exhausting! My dad is now retired so this year he baked most of our must-have desserts for Thanksgiving, sweet potato pie, pecan pie, apple pie, so I got to have a little fun with dessert and try something new. These White Chocolate Raspberry Puffs are pretty, delicious, and bite size so you can eat 3 or 4 a couple of them and still have room for pie.

These little bites are made with just a few ingredients, white chocolate, International Delight White Chocolate Raspberry creamer, puff pastry cups, and fresh raspberries. You can find puff pastry cups in the freezer section of your grocery store, all you have to do is pop them in the oven for 15 minutes or so (follow the instructions on the package) and you’ll have pretty little pastries just ready to be filled with white chocolate goodness.
For the filling you don’t even have to turn on the stove, just chop up your white chocolate, and in microwave proof bowl heat International Delight White Chocolate Raspberry creamer until it boils, about 1 minute. When the creamer is ready add the white chocolate to it and stir until everything is melted and smooth. At this point you are going to be smelling that delicious raspberry scent and you’re going to want to eat the ganache by the spoonful. Stay the course! If you can’t resist make yourself a cup of coffee and add the creamer to it, that should hold you over until it’s time for dessert ;). Fill each puff pastry cup with a small spoonful of ganache. Then top each one with a fresh raspberry.
I’d say they are so pretty you almost don’t want to eat them but I’d be lying. They are sooo good. In fact, they are so good that I couldn’t make them the day before because I was worried none of them would actually make it to my parents’ house. Instead I just cooked the puff pastries the night before and then made the ganache, and assembled them, when I got there. If you’re a better person than I am you can make them from start to finish the night before.
You can use any of these seasonal creamers for this recipe: International Delight Peppermint Mocha, International Delight Frosted Sugar Cookie, International Delight White Chocolate Raspberry, Silk Almond Creamer, Silk Soy Creamer, Dunkin’ Donuts Creamer Extra Extra, Vanilla and Caramel. Just leave off the raspberry (or don’t!) depending on the flavor. I found several of the flavors at Target, where they are into the holidays full-swing!
