Summer Fruit Salsa

Blueberries, apples, and strawberries make up this light and fresh summer fruit salsa. It is perfect side dish or dessert recipe for Memorial Day, 4th of July, and Labor Day cookouts .

Ingredients

  • 1 pint Strawberries
  • 1 pint Blueberries
  • 2 Apple
  • 1/4 cup Sugar
  • 1/2 Lemon juiced
  • Cinnamon Chips
  • 6 Flour Tortillas
  • 1/4 cup Butter
  • 1 cup Sugar
  • 1 tablespoon Cinnamon or more to taste

Instructions

  1. Preheat oven to 400°F
  2. Fruit Salsa
  3. Finely dice strawberries and apples.
  4. Mix apples and strawberries together in a large bowl with blueberries.
  5. Add 1/4 c sugar and juice from half of a lemon and mix thoroughly.
  6. Cover and refrigerate for at least 30 minutes. This can be made a day ahead of time and refrigerated overnight.
  7. Cinnamon Chips
  8. Melt half a stick of butter in the microwave.
  9. Lay out 6 tortillas and brush butter over them, covering them completely.
  10. Mix sugar and cinnamon together and sprinkle over tortilla covering completely.
  11. To make star-shaped chips use a star-shaped cookie cutter to cut the tortillas. If not you can just cut the tortillas into wedges and arrange on the baking sheet.
  12. Bake for approximately 7 minutes or until crispy.
