Summer Fruit Salsa

If you’re looking for a last minute side dish or dessert for your 4th of July party I’ve got it right here. This simple Summer Fruit Salsa is great all summer long but with this beautiful red, white, and blue fruit combination it is perfect for 4th of July especially when you serve it with star-shaped cinnamon chips!
We’ve got big plans for the upcoming holiday. I’ve been planning my menu all week and I can’t wait to throw some meat on the grill and get this party started! My guy will be manning the grill and cooking up some brats, hamburgers, hot dogs, and chicken, and I’m in charge of …well everything else. That means I’ll be running to Publix this week to do my grocery shopping and pick up all of my cookout supplies. My goal this year is to make everything as simple as possible so I can enjoy my guests more and worry about the details less. All of my sides can be made the day before, including today’s pretty, and delicious, Summer Fruit Salsa with Cinnamon Sugar Stars and I’m making clean up easy with the Chinet® brand. Good thing those plates are leak resistant because guests are going to be heaping their plates with this awesome fruit salsa. I am making it the day before to save time on the 4th of July and also because after sitting all night the fruits get juicy and the flavors meld together and it is even better!
It’s really easy to make. All you need to do is dice up strawberries, and apple, and pour in some blueberries. Then squeeze some lemon juice over everything to add a little zip to the flavor and to keep those apples from turning brown. Don’t worry it isn’t going to be sour because next comes the sugar. Gently toss everything together, put some plastic wrap over the bowl and put it in the fridge until you are ready to serve it. The chips are just as easy to make. A little butter on some flour tortillas, sprinkle them with cinnamon sugar then bake them until they are crispy. Simple and delicious! I made these star chips by cutting the flour tortillas with a star cookie cutter but you can always skip that and just cut them into triangles.
Summer Fruit Salsa
Ingredients
- 1 pint Strawberries
- 1 pint Blueberries
- 2 Apple
- 1/4 cup Sugar
- 1/2 Lemon, juiced
- Cinnamon Chips
- 6 Flour Tortillas
- 1/4 cup Butter
- 1 cup Sugar
- 1 tablespoon Cinnamon, or more to taste
Instructions
- Preheat oven to 400°F
- Fruit Salsa
- Finely dice strawberries and apples.
- Mix apples and strawberries together in a large bowl with blueberries.
- Add 1/4 c sugar and juice from half of a lemon and mix thoroughly.
- Cover and refrigerate for at least 30 minutes. This can be made a day ahead of time and refrigerated overnight.
- Cinnamon Chips
- Melt half a stick of butter in the microwave.
- Lay out 6 tortillas and brush butter over them, covering them completely.
- Mix sugar and cinnamon together and sprinkle over tortilla covering completely.
- To make star-shaped chips use a star-shaped cookie cutter to cut the tortillas. If not you can just cut the tortillas into wedges and arrange on the baking sheet.
- Bake for approximately 7 minutes or until crispy.
