Ingredients

  • 1 pound Deli roast beef thinly sliced
  • 1 pound Asparagus approximately 36 thin spears
  • 8 ounces Cream cheese
  • 1 tablespoon Horseradish

Instructions

  • Steam the asparagus so it is tender but crisp, approximately 2-3 minutes depending on thickness. When done run under cold water, pat dry, and set aside.
  • In a bowl stir together the cream cheese and horseradish until it is thoroughly combined.
  • Spread approximately 1 tablespoon of cream cheese on each slice of roast beef, add three spears of asparagus and roll the roast beef up.
  • Refrigerate in an airtight container until ready to serve.

Notes

Note: You can cook your asparagus to whatever level of tenderness you prefer. I like mine with just a little crispness to them so they aren't limp when they hang out of the roast beef. If you prefer less crunch it's not a problem!
