In a bowl combine the diced cucumber, tomato, and red onion. Add the red wine vinegar and salt and toss together. Set aside.
On a large plate or in a large bowl layer the ingredients together starting with the hummus, followed by the tzatziki, then top with the cucumber and tomato salad, and finish by scattering the olives and feta cheese on top.
Serve with cucumber slices and pita bread, or pita chips.
