Ingredients

  • Wheel of Brie
  • 6 ounces Black olives drained and patted dry
  • 1 Baby Carrot
  • 1 Red bell pepper
  • Your choice of Meats cheeses, accompaniments
  • Crackers pretzels, and bread

Instructions

  • Start with a large board or platter. Wood, marble, or slate all work great—just make sure it has enough surface area.
  • Place the brie snowman head first. Lay your brie wheel near the top of the board.
  • Add a row of whole black olives on top to make the brim of a hat. Then lay the olives out in a rectangle shape on top of the brim to form the shape of a hat.
  • Place two black olive slices as eyes and slice a baby carrot in half and lay it flat side down as a nose.
  • At the bottom of the wheel of brie use slices of red bell pepper to form the shape of a scarf going around the base slightly as if tying the scarf around the neck and then taking a few more slice sand putting them down vertically to form the part of the scarf that is hanging down.
  • Cut out cheese shapes using a small snowflake cookie cutters to create whimsical cheese cutouts. Place them around the board for a festive feel.
  • Add meats and cheeses. Fold or roll slices and fan them out in groups around the board. Alternate colors and textures for visual appeal.
  • Fill in with fruits, nuts, and extras. Tuck in grapes, nuts, and dried fruits around the edges and between the main components.
  • Finish with crackers and garnish. Place stacks of crackers and a few rosemary sprigs for that wintery, rustic vibe.
