Green Bean Sausage and Potato Casserole

Ingredients

  • 1.5 pounds Little potatoes quartered
  • 2 tablespoon Olive oil
  • 1 teaspoon Salt
  • 2 teaspoons Cajun seasoning
  • ½ teaspoon Black pepper
  • 12 ounces Kielbasa this is one package of kielbasa they usually range from 12-14 ounces.
  • ¼ cup Water
  • 1 tablespoon Butter
  • 1 cup Diced onion
  • 15 ounces Canned green beans drained
  • 1 cup Shredded cheddar cheese

Instructions

  • Preheat oven to 400 degrees F.
  • Place quartered potatoes into a bowl and drizzle olive oil over them. Toss until coated. Sprinkle salt, Cajun seasoning, and black pepper over the potatoes and toss again.
  • Heat a skillet over medium high heat. Add sliced kielbasa and ¼ cup of water and cook until the edges become slightlybrown (approximately 3-5 minutes). Add the cooked sausage to the bowl with the potatoes.
  • Add the butter to the skillet and then add the onions cooking until the onions are softened.
  • Add the cooked onions to the bowl with the sausage and potatoes followed by the can of green beans.
  • Toss together and pour everything into a 9x13 casserole dish.
  • Cover with foil and bake at 400 degrees for 30 minutes.
  • After 35 minutes remove the foil add 1 cup shredded cheese on top and bake for the remaining 5 minutes.
  • Serve hot.
