Top-down view of ingredients: petite gold potatoes, green beans, Polska kielbasa sausage, diced onions, butter, olive oil, and assorted seasonings on a dark surface.

Ingredients You’ll Need

  • Small white potatoes – Tender and creamy when roasted, these bite-sized potatoes soak up all the seasonings. You can substitute with Yukon Gold, red potatoes, or even russet potatoes cut into chunks.
  • Olive oil – Helps the potatoes crisp up and carries the flavors of the spices. You can swap it for avocado oil or melted butter for a richer flavor.
  • Seasonings – Salt, Cajun or Creole seasoning, and black pepper give this dish a boost of flavor.
  • Polska Kielbasa – Substitute with smoked sausage, Andouille, or turkey kielbasa if you prefer a leaner option.
  • Water – Used to steam and sear the kielbasa quickly, helping it brown without drying out.
  • Butter – Adds richness and helps caramelize the onions.
  • Onion – Provides a sweet and savory base that deepens the overall flavor. If you’re short on time, use frozen diced onions or shallots.
  • Canned green beans – Feel free to use fresh green beans (blanched) or frozen green beans (thawed) instead.
  • Cheddar cheese – Everything is better with a little cheese!
