Ingredients

  • 1 tablespoon Olive oil
  • 3 ounces Onion diced
  • 1 clove Garlic finely minced
  • 10 ounces Rotel
  • 1 tablespoon Tomato paste
  • 1 teaspoon Chili powder
  • ½ teaspoon Cumin
  • ½ teaspoon Salt
  • 12 ounces Cauliflower rice

Instructions

  • Heat olive oil in a large skillet over medium high heat.
  • Add the onion to the skillet and cook for 3 minutes. Then add the garlic and continue to cook for another 2 minutes until the onion is translucent.
  • Pour the Rotel into the skillet along with the tomato paste, chili powder, cumin, and salt. Stir together.
  • Add the cauliflower rice and stir everything together cooking for 3-5 minutes until the cauliflower rice is tender.
  • Serve immediately.
