Ingredients

  • 1 cup Mayonnaise
  • ¼ cup Pickle Juice
  • ½ cup Buttermilk
  • 1 packet Ranch dressing mix
  • 6 Cornbread muffins or 1 8x8 inch pan of cornbread roughly crumbled into bite-sized pieces
  • 10 ounces Grape Tomatoes cut into halves
  • 1 Green bell pepper diced
  • 3 Green onions finely chopped
  • 15 ounces Corn drained
  • 1 pound Bacon cooked and roughly chopped
  • 4 ounces Shredded Cheddar Cheese
  • 15 ounces Pinto beans drained

Instructions

  • In a small bowl combine the mayonnaise, pickle juice, buttermilk, and ranch dressing mix. Stir together well.
  • In a large bowl combine the cornbread, tomatoes, green bell pepper, green onion, corn, cooked bacon, shredded cheese, and pinto beans.
  • Pour the ranch dressing mixture over everything and gently fold together.
  • Serve immediately.
