- 1 cup Mayonnaise
- ¼ cup Pickle Juice
- ½ cup Buttermilk
- 1 packet Ranch dressing mix
- 6 Cornbread muffins or 1 8x8 inch pan of cornbread roughly crumbled into bite-sized pieces
- 10 ounces Grape Tomatoes cut into halves
- 1 Green bell pepper diced
- 3 Green onions finely chopped
- 15 ounces Corn drained
- 1 pound Bacon cooked and roughly chopped
- 4 ounces Shredded Cheddar Cheese
- 15 ounces Pinto beans drained
In a small bowl combine the mayonnaise, pickle juice, buttermilk, and ranch dressing mix. Stir together well.
In a large bowl combine the cornbread, tomatoes, green bell pepper, green onion, corn, cooked bacon, shredded cheese, and pinto beans.
Pour the ranch dressing mixture over everything and gently fold together.
Serve immediately.
