No Bake Strawberry Summer Cake

I think summer may be my favorite food season…or is it spring…or winter? No, it’s definitely summer. While there are foods I love in every season only summer has the farmer’s markets bursting with fresh fruits and vegetables. Sweet corn, tomatoes, peaches, and my all time favorite strawberries!
When I was young I didn’t have to go to farmers’ markets. I would spend hot summer days down in my grandparents’ garden picking all sorts of fresh vegetables. I can still remember helping my grandma wash and slice strawberries to put on the pound cake that she had made for dessert. She’d always let me steal a few to eat right then and I would dip them in sugar before taking a bite so they were extra sweet and juicy.
It doesn’t get much better than pound cake, Cool Whip, and fresh strawberries does it? For this recipe you don’t even have to bake! That’s right, this No Bake Strawberry Summer cake starts with a store-bought pound cake. You can usually find them in the bakery department or in the frozen food aisle and they make this recipe perfect for summer get-togethers. Your friends are going to love you when you show up with this beautiful summer dessert and it’s only going to take you 10 minutes to make. You just slice the pound cake in half, add a layer of Cool Whip, then a layer of fresh strawberries (don’t be stingy!) and then another layer of Cool Whip. Pile fresh Cool Whip and fresh strawberries on top and then grate a little lemon zest over everything to really make it taste like summer! And, if you prefer to make your own pound cake and whipped cream go for it! This cake is going to be a hit either way.

No Bake Strawberry Summer Cake
Ingredients
- 1 Pound Cake
- 1 pint Strawberries, feel free to use more!
- 1 container Cool Whip, **you can use homemade whipped cream if you prefer. Do not use whipped cream from a can it will deflate too quickly!
- Zest of 1 lemon
Instructions
- Slice pound cake in half.
- Add a layer of Cool Whip, a thick layer of sliced strawberries, and another layer of Cool Whip.
- Place the top piece of pound cake and top with more Cool Whip and whole strawberries.
- Sprinkle with lemon zest.
- Enjoy!
