These BLT Bites are a simple appetizer with bacon, lettuce and tomato on a RITZ® cracker.
It was so pretty outside last weekend that I spent some time outside working in the yard and planting my tomato plants. Summer isn’t summer for me without tomatoes. My grandparents had a huge garden when I was little so I grew up with a plate of fresh tomatoes on the table at every meal. I’ll take a tomato any way I can get it but my favorite way to have it is on a BLT… bacon makes everything better.
When Melinda and I read about the RITZ® Snackify Challenge the first thing that popped in my head was a BLT appetizer. I went to Walmart to get some RITZ® crackers and they were having a demo so I got to sample a few of their flavors. I grabbed a box of RITZ® Bacon crackers and we used ingredients we already had in the refrigerator for the rest. We used lettuce from a bag of Spring Mix salad, mayonnaise, grape tomatoes, and a few slices of crispy bacon. I’m not gonna lie, it was delicious! Once the bacon was cooked the whole thing only took about 5 minutes to put together. We chopped up the lettuce and added some mayo to it then scooped a little onto each cracker. Then we added a square of bacon and a slice of grape tomato. I’m not gonna lie, they were delicious! It was an awesome one bite BLT!
- 12 RITZ® Bacon crackers
- 1 c Spring Mix Salad
- 3-4 slices Bacon, cooked
- 3-4 Grape tomatoes, sliced
- 3 tsp Mayonnaise
- Cut your bacon into 1 inch squares.
- Chop salad mix into small pieces and mix with mayonnaise.
- Scoop a Tsp of salad on each cracker and place a piece of bacon on top.
- Top with a slice of grape tomato.
