It’s no secret Melinda and I like our food spicy and filled with/wrapped in bacon. You may have also noticed we love bite-sized appetizers. With fall quickly approaching it is time to start thinking about game day snacks. Appetizers that are easy to make (because we want to watch the game too!) and aren’t too fancy. Don’t get me wrong, I’m all about fancy canapes and caviar, but on game day our friends want something a little heartier. When we saw that Farm Rich was hosting a Farm Rich® Back Your Snack Contest for Game Time recipes we were psyched (the contest has now ended). 

 

For the contest the recipes had to take less than 30 minutes for prep/cooking, and include at least one 1 Farm Rich® Frozen Snack and one 1 Walmart Fresh product.

Easy peasy, we buy Farm Rich products at Walmart all the time. You can find them in the frozen food section and they have a huge selection. Our Walmart also has a really nice fresh fruits and vegetables section. Yay for one stop shopping! Farm Rich Mozzarella Sticks are one of my personal favorites and Melinda came up with a genius snack hack using them to make super easy Bacon Wrapped Jalapeño Poppers!

The recipe only takes 3 ingredients, fresh jalapenos, Farm Rich mozzarella sticks, and bacon. We cut just enough off of the side of the jalapeño to open it up and remove the seeds, then we nestled a delicious frozen cheese stick in it, and wrapped the whole thing in a piece of bacon.  Then we placed them on a wire rack over a baking sheet to keep them out of the bacon grease and baked them at 400°F for 20 minutes.

What we ended up with was a perfectly cooked bite of spicy jalapeño (don’t be afraid with the seeds removed they aren’t TOO spicy), gooey, stringy cheese, and bacony-goodness. They were beautiful, and delicious, and there is no way I’m going to be able to wait until game day before I make these again!

Melinda even put a drizzle of sriracha mayonnaise on the plate. It was a great addition to the smokey bacon and I know the guys are going to love it.

Snack Hack! Easy Bacon Wrapped Jalapeño Popper

Easy to make jalapeño poppers filled with mozzarella cheese sticks and wrapped in bacon.

Ingredients

  • 12 Jalapeños
  • 12 Farm Rich Frozen Breaded Mozzarella Sticks
  • 12 slices Bacon

Instructions

  • Cut just enough off of the side of each jalapeño that you can remove the seeds and fit a mozzarella stick in.
  • Add one mozzarella stick to each jalapeño. You may need to trim the mozzarella stick.
  • Wrap with one slice of bacon (trim if needed).
  • Place jalapeño poppers on a wire rack over a baking sheet.
  • Bake for 20 minutes.
  • Enjoy!
