I had a friend in town over the weekend so I did a lot of eating out and indulging in food I wouldn’t normally eat. It was so much fun and I miss her already but I was ready to get back into my usual eating habits. Sunday night before bed I made a big batch of Turmeric Chicken Salad and for lunch today I made this delicious sandwich. Needless to say I wasn’t missing all of those chips and cookies from the weekend. This sandwich is fresh, and light, and full of all sorts of wholesome goodness like avocados, turmeric, and bean sprouts all served on the tastiest whole grain bread.

If you haven’t tried it yet you need to keep and eye out for Pepperidge Farm Harvest BlendsTM bread. It just became available in stores at the beginning of September and I’m loving it. The bread is thick and soft, and it has a great, fresh-baked taste. So far it comes in three varieties Harvest Blends Seeded, Harvest Blends Sprouted and Harvest Blends Ancient Grains. They’re all whole grain breads with unique specialty blends of seeds and grains. I’m totally digging the Harvest Blends Sprouted and that’s what I used for today’s sandwich. I added healthy fats to my Turmeric Chicken Salad by mashing an avocado into it, then I placed it on the bread and topped it with fresh tomatoes, red onions, some slices of avocado (you can never have too much!) and alfalfa sprouts.

This turmeric chicken salad sandwich was a hearty, wholesome lunch full of better-for-you ingredients that totally hit the spot. As much as I loved all of those goodies over the weekend I can’t tell you how nice it was to have this for lunch. The healthy fats from the avocado and the hearty Harvest Blends Sprouted bread kept me feeling full for the whole afternoon!

Avocado Turmeric Chicken Salad Sandwich

This Turmeric Avocado Chicken Salad Sandwich is a wholesome lunch recipe that is filled with flavor.

Ingredients

  • 1 c Turmeric Chicken Salad
  • 1 Avocado
  • 2 slices Tomato
  • 2 slices Red Onion
  • 2 slices Pepperidge Farm Harvest BlendsTM bread
  • 1/3 c Alfalfa sprouts

Instructions

  • Mash half of an avocado into the Turmeric Chicken Salad.
  • Layer Avocado Turmeric Chicken Salad, tomatoes, sliced avocado, red onions, and alfalfa sprouts on Harvest Blends Sprouted bread.
  • Enjoy!
