I think one of the hardest things about eating low carb is mot getting bored with my lunch options. I have lots of great low carb dinner recipes like Instant Pot Butter Chicken, and my Low Carb Big Mac Bowl, and I take those leftovers for lunch some days, but I find having a recipe like Avocado Chicken Salad, something that is served cold and you can grab on for a quick lunch on the go, is a total lifesaver when it comes to sticking to your diet.
