Cranberry and Pistachio Cookies
December is all about baking, mostly cookies, with a little bit of homemade fudge and toffee thrown in. These easy Cranberry and Pistachio Cookies are packed full of some of my favorite things, dried cranberries, pistachios, and white chocolate chips, AND they are the perfect easy cookie recipe for my kids to help with.

I know one day I’m going to blink and my kiddos will be too grown up to want to bake cookies with mom. I love hanging out with my little helpers in the kitchen, so when I’m at Shoppers I’ve been grabbing a couple of bags of Betty Crocker Cookies mixes. They make baking time with the kids so easy! All you have to add to the mix is butter or oil, and eggs (follow the instructions on the package) plus whatever you want to add to them if you want to spice them up a little! I can set out some mix ins, fire up the mixer and let the kids go to work!
My favorite creation so far uses Betty Crocker Sugar Cookie Mix with the addition of dried cranberries, pistachios, and white chocolate. They are beautiful and delicious, and the last batch the kids and I made disappeared before I was able to give them away! No one around here is fessing up and I only remember eating 4 or 5 a couple. Missing cookies aside, the kids and I plan on giving away most of the cookies we make. This year we are spreading a little cheer by surprising our favorite people with fresh-baked cookies!

Cranberry and Pistachio Cookies
Ingredients
- 1 lb 1.5oz pouch Betty Crocker, Sugar Cookie Mix + ingredients required on back of package
- 1/2 c Pistachios, shelled and chopped
- 1/2 c dried cranberries
- 1 c White chocolate chips
Instructions
- Follow instructions on Betty Crocker cookie mix.
- Add pistachios, dried cranberries, and white chocolate chips.
- Roll dough into 1 inch balls and place 3-4 inches apart on an ungreased cookie sheet.
- Bake according to package instructions.
- Enjoy!

We made the chocolate chip cookies and added nuts to it. We plan on putting them on platters and delivering to the local nursing home for a sweet treat.
