This easy peach cobbler recipe uses yellow cake mix to create a buttery, golden crust atop sweet canned peaches for a quick peach cobbler that’s perfect for busy days or impromptu dessert cravings. With minimal prep and maximum flavor, it’s an easy peach cobbler recipe that is always a hit.

The first time I made this, I was curious to see how it compared with our simple peach cobbler using canned peaches. I was pleasantly surprised at how simple it was to make and how delicious that cake mix crust turned out. The two are definitely different, with the cake mix crust being sweeter and featuring a more pronounced buttery, vanilla flavor, as well as a softer texture. However, I’m happy to say they are equally delicious!

  • Canned peaches – Provide the juicy, syrupy base. You’ll want to stick with the peaches in heavy syrup for the right amount of sweetness.
  • Yellow cake mix – Forms the golden, cakey topping. You can use white or butter cake mix if preferred.

Instructions

Step 2 – Sweeten peaches. Drain two cans of peaches in heavy syrup (retaining some syrup for sweetness), pour into the pan. Sprinkle brown sugar and cinnamon, then stir until combined.

Step 3 – The crust. Evenly pour dry yellow cake mix over peaches. Don’t stir—it becomes the cake‑like crust.

Step 5 – Top with butter. Melt butter and drizzle over the cake mix layer. Use back of a spoon to spread it over the dry mix. Note: Some recipes call for slicing the butter into thin squares and covering the dry mix with squares of butter. I find that leaves a lot of patches of uncooked cake mix in the end so I prefer to melt the butter to ensure it covers the top completely. If you do have some dry areas left showing you can cut a few thin slices of butter and place them on the dry patches to ensure every bit is covered.

Step 6 – Add cinnamon. Lightly sprinkle extra cinnamon on top.

  • 1 box Yellow cake mix
  • ½ cup Brown sugar
  • 1 teaspoon Cinnamon, plus more to sprinkle on top
  • ½ cup Butter

Instructions

  • Preheat oven to 350 degrees F. Grease a 9×13 inch pan with non-stick spray.
  • Pour the peaches into the casserole dish and then add the brown sugar and cinnamon. Stir together until well mixed.
  • Carefully spread the dry cake mix over the peaches, covering them evenly. You can use a fork or spoon to gently spread the cake mix to the edges of the dish, but do not mix the cake mix with the peaches.
  • Melt the butter in a microwave safe dish and then pour over the dry cake mix. Use the back of a spoon or a form to evenly spread the butter over the cake mix. If there are any dry spots when you are finished you can use thin slice of butter to cover them.
