Foil Packet Garlic Potatoes

I make a lot of foil packet dinners during the summer grilling season and these easy Foil Packet Garlic Potatoes are one of my family’s favorites! These crispy garlic roasted potatoes are a simple alternative to baked potatoes with lots of flavor from garlic and fresh herbs.

If you’ve never made grilled potatoes in foil you’re in for a treat. Fill a foil pack with little red potatoes, or Yukon Gold potatoes, tossed in olive oil, garlic, parsley, thyme, and a little salt & pepper and then set them on the grill to cook for about 20 minutes. They come out of the foil packet perfectly tender and just begging for a little sour cream and cheddar cheese.

What is a Foil Packet?

A foil packet is a layer of heavy duty aluminum foil folded so it creates a pocket. The edges are folded so they are sealed and the food is placed inside before folding up the opening. Then the food can be grilled over and open flame, the grill, or baked in the oven.

What Size Pieces Should Your Potatoes Be Cut Into?

The size of the potato pieces determines how long  your potatoes will roast in the oven or on the grill. For this recipe I used small red potatoes and cut each one into quarters. If your potatoes are slightly larger You can dice them into 1 inch cubes, or you can cut them into 1/2 inch thick slices.

You want your potatoes to be thin enough to cook through in approximately 20 minutes and thick enough that they don’t turn into mush.

How to Make Foil Packet Potatoes:

Grill Instructions:

  1. Heat grill.
  2. In a large bowl combine the olive oil, parsley, thyme, garlic, salt, and pepper. Whisk together. 
  3. Add the cut potatoes to the olive olive mixture and toss until well coated. 
  4. Tear off 4 pieces of aluminum foil large enough to wrap around the potatoes. 
  5. Lay a piece of aluminum foil on a flat surface. Put ¼ of the potatoes into the middle of the foil and then fold the sides inward and where the foil meets fold the foil over several times to seal the packet. 
  6. Fold the open ends of the packet inward to seal each end. 
  7. Place the foil packets on the grill and close lid. Cook for 20 – 25 minutes or until potatoes are tender.

Oven Instructions:

  1. Preheat oven to 400 degrees F. 
  2. In a large bowl combine the olive oil, parsley, thyme, garlic, salt, and pepper. Whisk together. 
  3. Add the cut potatoes to the olive olive mixture and toss until well coated. 
  4. Tear off 4 pieces of aluminum foil large enough to wrap around the potatoes. 
  5. Lay a piece of aluminum foil on a flat surface. Put ¼ of the potatoes into the middle of the foil and then fold the sides inward and where the foil meets fold the foil over several times to seal the packet. 
  6. Fold the open ends of the packet inward to seal each end. 
  7. Place the foil packets on a baking sheet and cook for 30 minutes.

  • ¼ cup Olive Oil
  • 3 tablespoons Parsley, finely chopped
  • ½ tablespoon Thyme, finely chopped
  • 3 cloves Garlic, finely minced
  • 1/2 teaspoon Salt
  • ¼ teaspoon Pepper
