Keto Peanut Butter Mousse

This easy peanut butter mousse recipe is low carb, keto, and totally delicious! whipped cream and peanut butter are folded together to make a smooth, creamy, peanut-buttery mousse that is exactly what your keto sweet tooth has been craving.

This keto peanut butter mousse is something I make over and over again when I’m craving something sweet because I always have the ingredients on hand and it’s so quick and easy to whip up. I’m not gonna lie, there have been times when it hasn’t even made it into the refrigerator to chill before I’m scooping a spoonful into my mouth.

What I really like is that it’s perfect for portioning out so you can place it into small individual containers and just grab one when you have a craving. It’s a great way to have something a little sweet while keeping track of your macros.

What is in Keto Peanut Butter Mousse?

  • Heavy cream – This is the same as whipping cream, or heavy whipping cream.
  • Swerve Confectioners Sugar Substitute – Powdered sugar gives you a smoother mousse so I prefer Swerve confectioners sugar substitute over the granulated version.
  • Natural creamy peanut butter – Natural peanut butter is more fluid than the more processed version and it only has peanuts and a little salt added. Look for the brand with the lowest amount of net carbs (carbs – fiber = net carbs). If you have a peanut allergy you can switch this out with natural almond butter.
  • Gelatin – Gelatin helps make this mousse more stable so it doesn’t deflate as it sits out.
  • Warm water

How to Make Keto Peanut Butter Mousse:

  1. In a small bowl add 2 teaspoons of gelatin and stir in 2 tablespoons of water. Stir until the gelatin is dissolved and set to the side to let it firm up.
  2. Pour the heavy cream into the bowl of your electric mixer and set it to high, whipping the heavy cream into soft peaks.
  3. Add the sugar substitute and continue to whip the heavy cream until it forms stiff peaks.
  4. Gently fold the room temperature natural peanut butter into the whipped cream until it is fully blended. You can use the mixer on low if needed.
  5. Place the gelatin in the microwave and cook for 10 seconds so the gelatin softens back into a pourable consistency.
  6. Add the gelatin to the whipped cream and set the mixer on low to mix it until it is fully incorporated.
  7. Divide the peanut butter mousse into individual containers if desired, or place in one large bowl. Place in refrigerator to chill for at least 1 hour.

You don’t get much better than chocolate and peanuts so turn this into chocolate peanut butter mousse with a little drizzle of melted Lily’s Dark Chocolate on top before you dig in!
