Sheet Pan Chicken Fajitas
Sheet pan dinners are such an easy way to get dinner on the table in a hurry. One pan goes in the oven and out comes your whole meal. These Sheet Pan Chicken Fajitas are one of my go-to favorite sheet pan meals. Chicken, bell peppers, onions, and fajita seasoning are tossed together to make a simple Tex-Mex chicken dinner served on warm tortillas.

What you will need to make Sheet Pan Chicken Fajitas:
- Chicken– Thinly sliced chicken that cooks quickly on the sheet pan.
- Bell Peppers and Onions – A mix of red/green/yellow bell peppers and red onion
- Fajita Seasoning– Make your own or use a premade packet.

Once you have all of your ingredients it’s just a matter of tossing them together to coat them in the fajita seasoning and then popping the sheet pan in the oven for about 20 minutes. As the fajitas bake, you warm your Mission Organics Flour Tortillas according to the instructions on the package. I usually choose the microwave method. That way they’ll be ready to fill as soon as your chicken, peppers, and onions come out of the oven.
You can’t have fajitas without some homemade salsa. While your Sheet Pan Chicken Fajitas are in the oven, you’ll have just enough time to make a quick batch of fresh mango salsa. Diced mango, avocado, red onion, jalapeno, a squeeze of lime, and a little fresh cilantro make a delicious, tangy sweet and spicy salsa that goes great with Mission Organics® Blue Corn Tortilla Chips. When the chicken is cooked, you’re ready to make your fajitas. Just add a little chicken, some bell peppers, and onions to a warm Mission Organics Flour Tortilla and dinner is served!
- 6 Mission Organics® Flour Tortillas
- 2 pounds Chicken Breast thinly sliced
- 4 Bell Peppers a mix of red, yellow, green, and orange, thinly sliced
- ½ Red Onion
- 3 tablespoons Chili Powder
- 2 tablespoon Cumin
- 1 teaspoon Salt
- ½ teaspoon Garlic Powder
- ½ teaspoon Onion Powder
Preheat oven to 400 degrees F.
In a small bowl combine chili powder, cumin, salt, garlic powder, and onion powder.
Place thinly sliced chicken, bell peppers, and onions in a large bowl and sprinkle with the spices tossing until everything is well coated.
Spread the chicken and vegetables on a parchment paper lined, or greased, sheet pan.
Bake for 15 minutes or until chicken is cooked through.
While the fajitas cook warm Mission Organics® Flour Tortillas according to package instructions.
