With the holidays upon us I’ve been working on a menu that includes lots of keto recipes so that my friends and family that are eating low carb can enjoy Christmas dinner right along with everyone else.
I know there are a lot of low carb cauliflower mash recipes out there but I’m not exaggerating when I say this is the BEST Cauliflower Mash. It’s got everything that I love about mashed potatoes, cream cheese, butter…more butter…without all of the carbs.
It’s an easy, but totally delicious, keto side dish that everyone will love, whether they are skipping the carbs or not.

What Will I Need to Make Cauliflower Mash?
- Cauliflower Rice
- Cream cheese
- Butter
- Heavy Cream
- Salt
- Hand Blender (immersion blender)
Why Use a Hand Blender?
A hand blender is the key to getting the perfect texture for your cauliflower mash. It needs to be smooth and creamy to give you that mouth feel you’re craving. Get it right and you won’t even miss those mashed potatoes!

How to Make the BEST Cauliflower Mash:
Place your cauliflower rice (finely chopped cauliflower) in a large pot and fill with enough water to cover the cauliflower. Cover with a lid and cook over medium high heat for approximately 10 minutes.
Pour the cauliflower into a fine mesh strainer allowing all of the water to drain out. Press on the cauliflower lightly to remove as much water as possible. The more water you remove the better texture you will get for your mash.
Place the cauliflower back in the pot and use the Braun MultiQuick 5 Vario Hand Blender on medium-high speed to puree the cauliflower into a smooth mash.
Add butter, cream cheese, salt, and pepper and continue to use the hand blender to puree until it is smooth.
Do I Have to Use Cauliflower Rice?
I find that cauliflower rice cooks really quickly so I get the creamiest texture from it once everything is blended together.
I’m lucky because my grocery store sells fresh cauliflower rice in the refrigerated section of the produce aisle. You can make your own by using a box grater to grate cauliflower into small pieces, or in a food processed using the grater attachment.
If you don’t want to make cauliflower rice you can use a head of cauliflower and chop it into small pieces and then follow the instructions for the rest of the recipe as written. It may need to cook slightly longer you’ll just need to test it with a fork to make sure it is very soft and tender.

Ingredients
- 2.5 pounds Cauliflower Rice
- 3 ounces Cream cheese
- 1 ounce Butter
- ½ teaspoon Salt
- ⅛ teaspoon Pepper
Instructions

I’ve had to start cooking after almost 40 years of being spoiled as my husband did almost all the cooking. He had a hip replacement so I was called up from the minors! Made this as a Keto side dish (I halved the recipe though) to an Instant Pot meal and it was a hit! Creamy and yummy! My hubby said he’d never had any success with a cauliflower mash recipe so this is definitely a keeper.
I had better luck chopping up and steaming a head of cauliflower instead of the rice. Added about a bit of whipping cream for added creaminess and Parmesan cheese for extra flavor . A couple seconds in my vitamix.

The key to good cauliflower mash is getting the excess water out. Love your recipe. I didn’t rice the cauliflower, squeezed out the water from a steamed whole head.
