It’s time for the Oscars! Next Sunday, February 28th, I’ll be in front of the t.v. watching all of my favorites stars walk the red carpet. I love seeing what everyone is wearing, and this year Chris Rock is hosting so that should be fun! Appetizers, drinks, and swag bags, oh my! There are so many cute, and delicious ideas on this list I don’t even know where to begin!
Our recipe is for a simple, but elegant, Sun Dried Tomato, Pesto and Garlic bite-size appetizer, made with creamy, garlic whipped cheese, sun dried tomatoes, and a little pesto. They are beautiful little bites that are packed full of flavor. You can whip the cheese the day before and then put it is a disposable bag to pipe it into the phyllo cups, but honestly this recipe is so simple to make it is no big deal to make it right before guests head over…or in my case, right before you and the family settle in to watch the show.
I’m still up in the air on who I’m cheering for this year. There are so many great films up for awards, but I think I’m leaning towards Leo and The Revenant…but I do love Matt Damon…we’ll see!
- 2 boxes Mini phyllo shells
- 8 oz Cream cheese
- ½ c Sour cream
- ½ c Prepared pesto (1 tbsp set aside)
- ½ c Olive-oil packed sun dried tomatoes, diced (1 tbsp set aside)
- 1 clove Garlic, minced
- Bake empty shells according to box.
- In a mixing bowl, beat the cream cheese, sour cream, 1 tbsp pesto, 1 tbsp diced sun dried tomato, and garlic until smooth.
- Fill the cooled phyllo shells with the mixture.
- Top with the remaining pesto and sun dried tomatoes.
- **For a neater appearance place mixture in a pastry or plastic bag to be piped into shell.
