Whipped Ricotta and Tomato Dip is an easy appetizer recipe that is fresh, light, and perfect for summer parties!
I don’t know about you but there is something about putting on a bathing suit for the first time at the beginning of summer that gives me a that little reminder I need to lay off the junk and make some healthier choices when it comes to my snacking habits. Of course it’s also cookout season and you guys know how much I love a good BBQ! My trick for eating better without missing out on all of the fun is to make something super delicious that also happens to be lighter than the usual pasta salad and potato chip options. This Whipped Ricotta and Tomato Dip served with a variety of Harvest Stone® crackers hits the mark and it’s so good that no one even thinks about how light it is!
My Whipped Ricotta and Tomato Dip is super simple to make too. It’s just a few simple, fresh ingredients, part-skim ricotta cheese, goat cheese (my favorite!!), rosemary, salt, and pepper thrown into a food processor and blended until it is smooth and light. If you’re not as big of a goat cheese fan as I am feel free to substitute low fat cream cheese. Once it is all whipped together it goes into a bowl and I pile on fresh cherry tomatoes and some fresh basil then finish it all off with a drizzle of olive oil.
I always serve my Whipped Ricotta and Tomato Dip with Harvest Stone crackers. Harvest Stone uses organic whole grains and seeds such as brown rice, flax, chickpea, and quinoa to make their difference varieties of crackers and they are USDA organic, certified gluten-free and non-GMO. They are a great choice for snacking you can feel good about without compromising on taste. All of my gluten-free friends really appreciate having a delicious gluten-free option at parties too!
Whipped Ricotta and Tomato Dip is light, summery, and served cold which makes it perfect for taking to parties. Not to mention it’s totally irresistible. Once party guests grabs a Harvest Stone cracker and scoops up some of that creamy ricotta-goat cheese dip with the fresh tomatoes and olive oil they keep coming back for more!
