I don’t know about you but there is something about putting on a bathing suit for the first time at the beginning of summer that gives me a that little reminder I need to lay off the junk and make some healthier choices when it comes to my snacking habits. Of course it’s also cookout season and you guys know how much I love a good BBQ! My trick for eating better without missing out on all of the fun is to make something super delicious that also happens to be lighter than the usual pasta salad and potato chip options.

My Whipped Ricotta and Tomato Dip is super simple to make too. It’s just a few simple, fresh ingredients, part-skim ricotta cheese, goat cheese (my favorite!!), rosemary, salt, and pepper thrown into a food processor and blended until it is smooth and light. If you’re not as big of a goat cheese fan as I am feel free to substitute low fat cream cheese. Once it is all whipped together it goes into a bowl and I pile on fresh cherry tomatoes and some fresh basil then finish it all off with a drizzle of olive oil.

I always serve my Whipped Ricotta and Tomato Dip with Harvest Stone crackers. Whipped Ricotta and Tomato Dip

This Whipped Ricotta and Tomato Dip blends ricotta and goat cheese with fresh summer tomatoes for a light appetizer recipe that everyone will enjoy.

Ingredients

  • 16 oz Ricotta Cheese
  • 8 oz Goat cheese, , softened
  • 2 tsp Rosemary, , finely chopped
  • ¼ tsp Salt
  • tsp Pepper
  • 1 Tbsp Olive Oil
  • 2 c Cherry Tomatoes, , cut into quarters
  • 5 Basil leaves, , thinly sliced

Instructions

  • In a food processor combine ricotta cheese, goat cheese, rosemary, salt and pepper. 
  • Blend until fully combined and smooth.
  • Scoop cheese mixture into a serving bowl and top with chopped tomatoes, basil, and a drizzle of olive oil.
  • Enjoy!
