Cranberry Fluff Cheesecake Bites
The holidays are all about entertaining and when I entertain I love making bite-size desserts and appetizers. These beautiful, no-bake, Cranberry Fluff Cheesecake Bites are packed full of a simple sweetened cream cheese and topped with my grandma’s Cranberry Fluff. Every bite is a little sweet, a little tart, and I’m telling you they are going to be a hit at your upcoming holiday parties!

After the success of my Mini Cranberry Fluff Cakes I wanted to try another dessert using cranberry fluff that was even easier. You don’t get much easier than a no-bake dessert right? My cranberry fluff cheesecake bites use a no-bake cheesecake made from a mixture of cream cheese, sugar, and vanilla extract. You pipe the cheesecake into pre-made phyllo cups and then top it with delicious, marshmallow-y cranberry fluff.
The cranberry fluff recipe is my grandma’s and it has been a family favorite ever since I can remember. It is made with sweetened fresh cranberries, grapes, marshmallows, whipped topping, and pecans. The sweet, tart, and crunchy are meld together into an amazing dessert. We always just ate it all on its own along with Thanksgiving or Christmas dinner, who knew it could be used in so many awesome desserts?!
Can You Make Cranberry Fluff Cheesecake Bites Ahead of Time?
Besides being super cute and totally delicious these cranberry fluff cheesecake bites are perfect for the holidays because the cranberry fluff and the no-bake cheesecake can be made ahead of time. You will want to wait to assemble them until you are almost ready to serve them. That way the phyllo cups will stay crisp.

Cranberry Fluff Cheesecake Bites
Ingredients
- 30 Mini Phyllo Cups
No Bake Cheesecake
- 8 ounces Cream cheese , room temperature
- 1/2 cup Powdered Sugar
- 1/4 teaspoon Vanilla
Cranberry Fluff
- 6 ounces Fresh Cranberries
- 1/2 cup Sugar
- 4 ounces Crushed pineapple , drained
- 1/2 cup Red grapes, sliced
- 1/2 cup Pecans, chopped
- 1 cup Mini Marshmallows
- 4 ounces Cool Whip, 1 1/2 cups
Instructions
No-Bake Cheesecake
- Combine ingredients in a bowl and mix thoroughly.
Cranberry Fluff
- Chop cranberries in the food processor.
- Add sugar, cover and place in refrigerator overnight (or at least 2 hours).
- Once the cranberries have been sweetened add pineapple, grapes, and pecans to cranberries and mix together.
- Add mini marshmallows and mix.
- Add Cool Whip and fold mixture together until thoroughly mixed
- Serve immediately or cover and store in the refrigerator
Assembly
- Pipe a small amount (about a 2 teaspoons) of no-bake cheesecake in each phyllo shell.
- Top each one with cranberry fluff (about 1-2 tablespoons).
- Refrigerate until ready to serve.
- Enjoy!
