I was strolling the grocery aisles yesterday in search of an easy dessert to bring to my friend’s 40th birthday which may or may not have been starting in 2 hours. The clock was ticking! I still needed to shower and get beautiful which takes over an hour these days. Hard to believe, I know!  I didn’t want to just go to the bakery and buy a premade dessert. I wanted something seasonal and light, and most important, fast to make. Everywhere I looked, I was bombarded with pumpkin spice flavored everything. I had a light bulb moment when I came across a box of pumpkin spice Jello pudding. It screamed fluffy pumpkin spice dip to me. I grabbed a box of the puddint, cream cheese, and a jar of marshmallow fluff, along with a few dippers to go along with the dip, gingersnaps, apples and nilla wafers.  Off I go to self checkout. Am I the only one who loves self checkout? Not only does it save me time but I always played grocery store when I was a kid, it’s like I’m living the dream ;).

I got home and whipped up the fluffiest pumpkin dip ever. This might the be the easiest recipe I have ever made. All I did was mix the cream cheese, fluff, and the pumpkin spice Jell-o in a bowl. I used my mixer, since time was ticking and I couldn’t waste precious shower minutes on hand mixing it. Plus my mixer is awesome and I use it any chance I get because it makes me feel all fancy, like I’m channeling my inner Martha Stewart.

Easy 3 ingredient no-bake Pumpkin Fluff Dip made in less than 5 minutes. Great for Thanksgiving when you're short on time.

Ingredients

  • 8 ounces Cream cheese , softened
  • 7 ounces Marshmallow Fluff
  • 1 tablespoon Pumpkin Spice Jell-o pudding

Instructions

  • Mix the cream cheese, fluff and pumpkin spice Jello- pudding mix in a bowl by hand or mixer until completely blended.
  • Store in the refrigerator until ready to store.
  • Serve with gingersnaps, apple slices or Nilla wafers.

I had this brilliant idea of putting it in one of the leftover Halloween pumpkins I still had sitting on my front stoop. Major fail, it was frozen and couldn’t get the knife through it. Then I had flashes of me cutting a finger off as I stabbed away at the pumpkin. I was not going to miss this epic party! I had a sitter and everything, so you know nothing was going to get in the way of my husband and I getting a night out. I settled for my green lettuce bowl.

I was showered, dressed and had a dessert all in record time! The party was so much fun, we had a great time, so great I broke my toe dancing. Still sounds ridiculous when I say it out loud…..BUT the pumpkin fluff was a hit so I guess it all evens out.
