This Grilled Summer Salad is a simple foil packet meal made up of fresh summer vegetables, and finished with a lime vinaigrette.
Since there are so many awesome vegetables available in the summer I signed myself up for the Morningstar Farms’ Veg of Allegiance Program, and I’ve been going meatless one day a week. It hasn’t been as hard as it sounds! I’m really lucky because there is a farmers’ market that sets up right outside of my office on Thursdays. I walk over there for lunch and pick up fresh veggies for the weekend. They have so many fresh fruits and vegetables to choose from but two things I never leave without are tomatoes and sweet corn. Sweet corn is a big deal here in Maryland and we’re at the peak of the season.
Last week I bought my usual sweet corn, and tomatoes, as well as some bell peppers, and jalapeño peppers, for my meatless dinner on Saturday. I may be going meatless but you know that if it is summer time I am going to find a way to grill! I combined all of my fresh vegetables together with black beans and and wrapped them up in foil to cook them on the grill. Then I threw a couple of MorningStar Farms Spicy Black Bean Burgers on the grill. MorningStar Farms has tons of veggie cuisine options but the spicy black bean burgers are my favorite. They have so much flavor and they are a great healthy option for me and my family.
Once everything was cooked I finished off my grilled salad with a homemade lime vinaigrette. It is just a simple mixture of lime juice, olive oil, and salt, but it adds a brightness to the salad that takes it to the next level. I served my grilled veggies as a side with my Spicy Black Bean burgers but it also makes a great topping for the burger.

Grilled Summer Salad
Ingredients
Summer Salad
- 2 ears Sweet Corn
- 2 c Cherry tomatoes, halved
- 1 Orange bell pepper, diced
- 1 Jalapeño, diced
- 1 15 oz. can Black Beans
- 1 Tbsp cilantro, minced
- Salt
Lime Vinaigrette
- 1 Lime, juiced
- 1/4 c Olive Oil
- Salt
Instructions
Summer Salad
- Remove black beans from the can and pour into a strainer then wash with water to clean the beans.
- Mix vegetables and beans together and add salt to taste (about 1/4 tsp).
- Pour mixture onto foil and wrap up in a tight packet.
- Place packet on the grill over indirect heat and cook for 20-30 minutes.
- Remove from the grill, toss with lime vinaigrette, and garnish with cilantro before serving.
Lime Vinaigrette
- Mix lime juice and olive oil together.
- Add salt to taste and whisk quickly until well mixed.

This is exactly how I love to eat! Sounds so fresh and good. I did not know Morning Star made a Black Bean Burger. I must try! I tried making my own from scratch and it was a mess.
