Ingredients You’ll Need
Here’s what you’ll need for this chicken bacon casserole.
- Olive oil
- Chicken breast – Boneless, skinless breast and cut it into equal sized cubes. You can also use rotisserie chicken if you want to save time. If you do this you can cut back on the salt.
- Salt
- Broccoli florets – You can use either a crown or pre cut florets if your store sells them. I prefer fresh, but you could use frozen if you thaw them and pat them dry.
- Bacon – You can use your favorite flavor of bacon, but I usually just go with a traditional bacon flavor without extras.
- Cheeses – You’ll need cheddar cheese, mozzarella cheese, and cream cheese.
- Ranch seasoning – I use my homemade Ranch seasoning, but you could use a store bought if you prefer.
Instructions
When you are ready to get cooking, you can follow these easy steps.
Step 1 – Prep the chicken. In a skillet over medium high heat, add the olive oil, cubed chicken, and salt. Cook the chicken for about 10 minutes or until it is cooked through and then set aside.
Step 2 – Steam the broccoli. Place the cut broccoli florets in a microwave safe bowl with 1 cup of water. Cover them with a damp paper towel and microwave on high for about 3 minutes or until the broccoli is fork tender.
Don’t overcook! They will cook a bit more in the oven.
Finally, drain the broccoli and pat dry with a paper towel and set aside.
Step 3 – Assemble the casserole. Preheat the oven to 375 degrees F.
As it heats, combine the softened cream cheese and ranch seasoning in a small bowl.
Next, add ½ of the broccoli and ½ of the chicken to the bottom of a casserole dish.
Use a ½ teaspoon measuring spoon to portion out ½ teaspoon servings of the cream cheese mixture all over the top of the chicken and broccoli.
Next, top with half of the shredded cheddar cheese, half of the mozzarella cheese, and half of the bacon crumbles and then make a second layer following the same steps.
Finish the top of the casserole with the remaining bacon and then cover the dish with aluminum foil.
Step 4 – Bake and serve. Finally, place the prepared dish in the oven and bake for 30 minutes or until the cheese is fully melted.
Remove from the oven and serve with your favorite sides or as is. If you are not keeping keto, this goes great with rolls or bread for dipping into the casserole.
Can I Use a Packet of Ranch Dressing Mix?
You can definitely use a packet of Ranch dressing mix. The main draw back is the additives and preservatives that some people prefer not to eat.
Our homemade Ranch seasoning does not contain any preservatives or additives and still gives you that awesome buttermilk flavor. And if you really want to cut down on carbs, you can eliminate the buttermilk powder and just use the herbs and spices.
How to Make it Ahead of Time
Follow the recipe and assemble the casserole. Once assembled, cover tightly with either a lid or with cling wrap and then place in the refrigerator for 2 to 3 days or until ready to cook. When you reheat, add 10 minutes to bake time to ensure everything is heated through.
You could also bake fully and then store leftovers in the refrigerator in a sealed container. To reheat, you can microwave individual servings for 2 minutes or heat in a skillet over medium heat for 5 to 7 minutes or until warmed through.

Using 1/2 teaspoon measuring spoon to spread cream cheese mixture on top?? Will that not take forever?
You can use a teaspoon or a half tablespoon if you prefer. It’s just about putting little dollops of cream cheese throughout the casserole. Truly you don’t have to measure it out just go with your gut 🙂
Thanks for a great recipe. I did cook my bacon pieces first then cooked my chicken in the bacon drippings. It added an extra bit of flavor to the chicken.
Love that idea!!
I did the same!
Delicious! We omitted the cream cheese and cheddar — only added mozzarella and it was amazing.
Absolutely delicious
This took about 30 min to make and 30 min in the overnight . It’s tasty but definitely missing something . I would do onions next time I think.
Tasty but too dry. It would be better with a creamy sauce
Firstly I love this recipe! I’ve made it at least 5 times, this last time I mixed about a 1/2 Cup Chicken broth to the cream cheese mixture partially because it’s a dry casserole and my husband doesn’t love it because of that and onions and some black pepper to the chicken when I was cooking it. I’ll definitely keep messing with it until it’s perfect. 👍🏼
I like the idea of adding some broth to make it less dry. We didn’t want a watery casserole but I can see where someone might want it to feel a little creamier. I’ll give it a try!
I really enjoyed this recipe! I added a few tweaks to recipe! I added pasta to it, and for the sauce I used the cream cheese but I put in a packet of the ranch dressing seasoning! After I mixed it all together I dumped in my pasta into the cream sauce and then used that as a layer (instead of throwing in drops of the sauce for later, I added the pasta with cream mixture) was very good!
That sounds amazing!!
