Alright, it’s the end of January, checking in to see how everyone is doing on those New Year’s resolutions! I’ve done pretty good with the low carb thing. I’ll admit the cheeseburger tots may have been a small bump in the road but I was right back to it the next day and to be honest, I love it! I feel great and I still get to eat awesome recipes like this creamy One Pot Low Carb Shrimp Alfredo.

I think the thing that has helped me the most is planning out meals and having them in the fridge ready to go when I need them so I don’t get tempted to snack on something I’m not supposed to. Needless to say my Rubbermaid® Brilliance™ storage containers are getting a work-out and it is making a huge difference, not just in eating low carb but also in how quickly I can throw together weeknight meals! Before the week begins, usually on Sunday afternoon, I prep several things that can be used to make meals throughout the week such as ground beef, chicken, zucchini noodles, and cauliflower rice. I received a Rubbermaid® Brilliance™ 10-piece set for Christmas (these are the things that excite you when you’re all grown up!) and it is perfect for storing all of the difference meal components. Rubbermaid® Brilliance™ is new and you can find it at Walmart. These aren’t your run-of-the-mill storage containers, they are a step above the rest. You know how most plastic containers will stain over time when you put red sauce in them (drives me nuts!)? Not these! They are stain resistant, crystal clear, which makes it easy to see what is in each container, microwave safe + splatter-proof, and they are stackable so they don’t take up any more room in the fridge than they have to.
The other thing that has been helping me stay on track is getting creative and finding ways to turn the foods I love in to low carb lunches and dinners. Just the other day I shared my low carb chicken cordon bleu casserole with you and this weekend I made this amazing One Pot Low Carb Shrimp Alfredo. It’s low carb and super easy to prep ahead of time so on a busy weeknight I can throw everything together in one pot and have a delicious home cooked meal ready in minutes. One Pot Low Carb Shrimp Alfredo only takes a few simple ingredients, fresh basil, garlic, grape tomatoes, zucchini noodles, shrimp, and of course Bertolli® Creamy Basil Alfredo sauce. The tomatoes, zucchini noodles and shrimp can all be made ahead of time and stored in individual Rubbermaid® Brilliance™ containers until I need them.
During the week it’s all ready for me and I all I have to do is put all of the ingredients in a skillet, add the Bertolli® Creamy Basil Alfredo sauce and let everything cook until it is heated through. The Bertolli® Creamy Basil Alfredo sauce is awesome. It is rich and creamy and only 2 g carb per 1/4 c! That makes it a great option for a low carb dinner. I didn’t even have to season everything as I went. The Bertolli® Creamy Basil Alfredo sauce gave the dish all the flavor it needed. You can also switch things up a little and use Bertolli® Tomato & Basil Sauce if you want something different.
The whole recipe makes about 4 servings so I usually have enough left for lunch during the week. I pack up my leftovers in my Rubbermaid® Brilliance™ container and I have a quick and easy low carb lunch for the next day.
One Pot Low Carb Shrimp Alfredo
Ingredients
- 1 Tbsp Olive oil
- 2 cloves Garlic diced
- 1 lb Shrimp, , cooked and peels tails off
- 18 oz Zucchini noodles, (4-6 zucchinis)
- 1 c . Cherry tomatoes, , halved
- 4 leaves Fresh Basil
- 1 jar Bertolli® Creamy Basil Alfredo Sauce
- Note: If you want to use fresh, , uncooked shrimp you can. Just saute the shrimp with the garlic for 2-3 minutes or until it becomes pink then proceed with the recipe as written.
Instructions
- In a skillet over medium high heat add diced garlic and saute for 30 seconds.
- Add shrimp, zucchini, tomatoes, fresh basil, and Bertolli® Creamy Basil Alfredo Sauce.
- Cook for 5-7 minutes or until warmed through.
- Enjoy!

Where can I find zucchini noodles
We made ours using a spiralizer (there is a link to one in the post) but I have also started seeing them at the grocery store. I shop at Harris Teeter and they have several types of zoodles available in the refrigerated section in their product department. It makes life even easier!

I guess I’m the odd one. I wasn’t a fan. It was ok. The tomatoes didn’t go well with the shrimp and I didn’t like the jar of sauce. I think if I made the alfredo sauce myself and took out the tomatoes it would have tasted better. But I’ll pass on this recipe. Sorry!

The “noodles” are made from spiralized zucchini.
My dad became diabetic last year and so we’ve been trying to find good low carb recipes and this was DEFINITELY a hit!! We love it so much! The only thing is…. the sauce is soupy. Is it supposed to be like that? If not how can I make it not soupy?
Zucchini releases water as it cooks so that can make the sauce a little soupy. If you want you can saute the zoodles and then remove them from the pan and set them on a paper towel. Then cook the other ingredients and when they are ready and warm add the zoodles back to the mix and serve.
Can the low carb shrimp alfredo be frozen?
I wouldn’t freeze this because I think the zucchini noodles will get mushy when they are reheated.
Can I use chicken instead of shrimp
Definitely! You can bake chicken and then cut it up into bitesize pieces to toss with the zucchini noodles and sauce OR you can cut the chicken up and cook it in a skillet before adding the other ingredients and following the rest of the recipe.
I added a little cayenne and I used regular linguini noodles. Turned out really good, this recipe is a keeper!
