One of my favorite parts of Thanksgiving is all of the turkey I get to eat! That crispy skin and moist tender meat…yum!! My whole family loves it so we often make two turkeys so that there are lots of leftovers. Thanksgiving “dinner” is served in the late afternoon and then in the evening we all head into the kitchen for round 2! Needless to say, I always pack up a big bowl full of leftovers to take home with me after Thanksgiving dinner and that means lots of awesome meals made with turkey like my Thanksgiving Leftovers Sandwich and this super easy One Pot Turkey and Rice.

The dish couldn’t be any easier to make. It uses cooked turkey so it is really fast and simple to make on the fly. You start by sautéing some onions in butter, then you throw in a little rice, broth, and some garlic, salt & pepper for good measure. Cook everything for about 15 minutes then add the cooked turkey, green peppers, peas, and pimento, and cook until the rice is tender. So easy and so good! I love the addition of the pimento because it adds a lot of flavor and a beautiful pop of red to the dish. Besides the turkey my favorite part is that this dish is a complete meal made in one pot so clean up is fast! Leftovers also heat up great for lunch the next day…but I’ll be honest I rarely have any because it’s just that good.

Using leftover turkey makes this recipe easy but don’t let the idea of cooking up a turkey stop you from making it. Once all of your turkey leftovers are gone this dish is just as good with cooked chicken breasts. One night when you are making chicken for dinner cook up a little extra and then make this simple one pot meal later in the week.

Ingredients

  • 2 Tbsp Butter
  • 1 small Onion, chopped
  • ½ tsp Salt
  • ¼ tsp Pepper
  • ½ tsp Garlic, minced
  • 1 c Rice
  • 2 ½ c Chicken broth
  • 3 c Cooked Turkey, cubed
  • 1/2 Green Bell Pepper, seeded and thinly sliced
  • 1 c Peas, frozen
  • 1 2oz jar Chopped Pimento, drained

Instructions

  • Melt butter in a large skillet over medium-high heat. Add onions, stirring frequently and cooking until tender, about 10 minutes.
  • Add rice, broth, salt, pepper, and garlic to the onions. Mix well.
  • Bring mixture to a boil then reduce to a simmer and cover cooking for 15 minutes.
  • Add green peppers, peas, pimento, and cooked turkey. Place the cover back on and continue to cook for 10 minutes or until rice is tender.
  • Enjoy!
