How to Make a Holiday Charcuterie Board
One of the best things about making a charcuterie board is that there are no rules, you can use whatever ingredients you and your guests enjoy! Whether you’re keeping it simple with kid-friendly favorites or mixing in bold flavors for the adults, the beauty of a charcuterie board is its customization.
From classic meats and cheeses to fruits, veggies, crackers, and dips, the possibilities are endless. Below, we’re sharing some of our favorite ingredient ideas to help you build a delicious and eye-catching board for your next gathering.

How to Make the Turkey Body:
To build the perfect Turkuterie board you do need to have the “turkey” in the center. We made our using ours using the following:
- Classic Cheese Ball – This makes up the turkey’s body! We used our classic cheese ball recipe and instead of coating it with chopped pecans we used pecan halves and gently pressed them into the cheeseball in layers to make the feathers on our turkey.
You can do the same with a store-bought version, just leave it out for a bit to soften or skip the pecan haves and just use a cheese ball with the traditional chopped pecans on the outside.
You could substitute almonds for the pecans but you know we love a classic southern Thanksgiving menu so we always have lots of pecans on hand during the holidays!
- Pepperoni – Thinly sliced pepperoni forms the turkey’s head and face. Start at the bottom of the neck and work your way up layering the pepperoni until it is level with the cheeseball.
- Black Olives – Cut the tips off of two black olives and use these for the turkey eyes. Then add the rest to your board for snacking.
- Cheese – We cut a small triangle of cheese to make the turkey beak
- Red bell pepper – We cut a tear drop-shaped piece of red bell pepper and put it to the side of the cheese beak to make that classic turkey wattle.
Making the Turkey Tail
The rest of the charcuterie board makes up the turkey tail feathers. There are no rules here just layer together meats, cheeses, fruits and veggies, bread, crackers, etc.
Start at the outside making your arch and work your way in towards the turkey body, arranging slices of cheese, bell peppers, carrots, pretzels, and crackers in rows that fan out like turkey feathers.
Fill Gaps with Extras
Use all of your other accompaniments to fill in empty spaces. This makes the board look full and inviting.

Cheese Options for a Thanksgiving Charcuterie Board
Mild & Kid-Friendly Cheeses
These are great for picky eaters and younger guests:
- Colby Jack – Mild, marbled, and colorful—perfect for visual appeal.
- Cheddar (Mild or Medium) – A classic choice that’s flavorful but not overpowering.

- Make rosettes or fans: Create visual interest with folded or rolled layers. We used salami fans as the outer part of our tail-feather arch. It gave it that ruffled-feather look.

- Keep it simple: Choose 2–3 meats max for balance and ease.
- Roll or fold slices: Adds texture and helps with the turkey feather layout.
- Use color variety: Pair light meats like turkey with darker salami for contrast.
Accompaniments for a Charcuterie Board
Crackers & Breads
Perfect for stacking with cheese and meat or scooping up spreads:
- Round Crackers – Buttery and sturdy—perfect for stacking with meats and cheeses. Try Ritz or your favorite brand.
- Square or Wheat Crackers – Add shape variety and whole grain texture. Triscuits or Wheat Thins are good options.
- Mini pretzels – Add a salty crunch and are great for dipping into the cheese ball. Swap with breadsticks or pretzel crisps.
- You can also use pita chips, mini breadsticks, or sliced baguette or crostini

- Baby Carrots – These are a fun and healthy addition, doubling as orange “feathers.”
- Red, Yellow & Orange Bell Peppers – Slice into long strips to create vibrant feather fans. Cucumber or celery sticks are good substitutes.

Ingredients

- 5 ounces Pepperoni
- 4 ounces Pecan halves
- Black olives
- Red bell pepper
- Your choice of Meats, cheeses, accompaniments
- Crackers, pretzels, and bread
Instructions
- Set your prepared cheese ball near the bottom center of your board—this will form the turkey’s body.
- Layer pepperoni slices in a half-circle on top of the cheese ball to shape the turkey’s head. Use two black olives for eyes and a small carrot slice or red pepper strip for the beak/wattle.
- Start at the top and work your way down, arranging slices of cheese, bell peppers, carrots, pretzels, and crackers in rows that fan out like turkey feathers.
- Fold or roll turkey and salami slices, and place them between the layers of crackers and veggies for added texture and flavor.
- Use olives, more crackers, or small pieces of cheese to fill in empty spaces. This makes the board look full and inviting.
- Fresh herbs like parsley or rosemary can be tucked in around the edges for a festive touch.
