This cheesy Artichoke Chicken Bake is an easy keto chicken bake recipe made with layers of chicken breast stuffed with cheese, bacon, and artichoke hearts, baked to perfection in the oven!
Cheesy Artichoke Chicken Bake
This easy, cheesy, Artichoke Chicken Bake was inspired by the amazing Chicken Artichoke Dip we shared a couple of weeks ago. It was so good I found myself eating it with a fork so I decided to turn it into the ultimate keto chicken bake.
I layered all of that cheese, bacon, and artichoke hearts goodness in between thinly sliced chicken breasts and baked it in the oven until it was perfectly melted. Super simple, totally delicious. The whole family loved it!

How to Make Artichoke Chicken Bake:
This easy chicken casserole recipe has a lot of ingredients but it only take a few minutes to throw everything together!
- Place a chicken breast on a cutting board and press your hand on it holding it firmly in place. Use a sharp knife parallel to the cutting board to cut through the chicken horizontally creating two thin slices. Repeat this step for each of the chicken breasts.
- Combine all of the ingredients except the chicken in a bowl and stir together.
- Place 4 thin chicken breast halves in a greased baking dish. Sprinkle with 1/2 teaspoon of salt.
- Spread half of the cheese mixture over the chicken.
- Place the remaining 4 chicken breast halves on top of the cheese mixture.
- Top with the remaining cheese mixture.
- Cover the dish with foil and bake at 400 degrees F for 30 minutes.
- Remove the foil and continue to bake for 10 minutes or until chicken is cooked to an internal temperature of 165 degrees F.
Did you know that companies inject their chicken breasts with water to plump them up so they look bigger in the store? As the chicken is cooked the water comes. This may result in excess water in your baking dish when your chicken bake comes out of the oven.
If this happens you can simply remove the chicken from the dish, pour off that excess water, and then return the chicken to the dish. No harm done!

Ingredients
- 2 pounds Chicken breasts, approximately 4 chicken breasts
- 6 slices Bacon, cooked and chopped
- 7 ounces Quartered artichoke hearts, drained and chopped
- 1 ounce Fresh baby spinach, chopped
- 1/4 c Mayonnaise
- 2 ounces Cream cheese, softened
- 5 ounces Smoked Gouda, finely chopped or shredded
- 3 ounces Havarti or Gruyere, finely chopped or shredded
- 1 teaspoon Garlic powder
- 1/2 teaspoon Onion powder
