What Are 7 Layer Bars?

7 Layer Bars (also called Magic Bars, Hello Dolly Bars, or Dream Bars) are a layered dessert bar that packs an incredible combination of flavors and textures. You’ve got a buttery graham cracker crust, layers of chocolate and butterscotch chips, sweet coconut, crunchy pecans, and a topping of luscious, sweetened condensed milk that ties everything together.

They’re easy to make, require no fancy equipment, and are perfect for sharing—or not. I won’t judge if you keep them all to yourself.

Why They’re Called Magic Bars

The name “Magic Bars” isn’t just a cute nickname—it truly feels like magic when these bars bake. The sweetened condensed milk transforms into a caramel-like layer, binding everything together into a gooey masterpiece. No wonder they’re also called Magic Cookie Bars!

Baking ingredients on a countertop include pecans, graham cracker crumbs, butterscotch and semi-sweet morsels, sweetened coconut, a stick of butter, sweetened condensed milk, and salt.

Ingredients You’ll Need

  • Graham Cracker Crumbs – These form the buttery, crumbly base for the bars, providing a sturdy foundation and a hint of sweetness.
  • Butter – Melted butter acts as the binder for the graham cracker crumbs, helping create a solid, flavorful crust.
  • Salt – Just a pinch balances the sweetness of the other ingredients, enhancing the overall flavor profile.
  • Semisweet Chocolate Chips – These add rich, chocolaty goodness, perfectly balancing the sweetness of the other layers.
  • Butterscotch Chips – Bring a warm, caramel-like flavor that complements the chocolate and coconut.
  • Sweetened Flaked Coconut – Adds texture, a touch of tropical sweetness, and a chewy bite to the bars.
  • Chopped Pecans – Provide a nutty crunch, adding depth and balancing the gooeyness of the condensed milk. Buy some extra and make our Pecan Pie Brownies and Rolo Pretzel Turtle Candy.
  • Sweetened Condensed Milk – The magical glue that binds all the layers together, caramelizing during baking to create a luscious, gooey finish.

Indulge in the treat of these delicious layered cookie bars with a simple six-step process: crushed cookies, chocolate chips, and nuts, topped with coconut and condensed milk, then baked in a square pan. Perfect for any occasion or as your go-to 7 Layer Bars recipe!

Instructions

  1. Preheat oven and prepare dish. Preheat oven to 350°F. Spray an 8-inch square baking pan with cooking spray and line it with parchment paper for easy removal.
  2. Make the crust. Mix the graham cracker crumbs, melted butter, and salt in a bowl. Press the mixture evenly into the bottom of the prepared pan.
  3. Layer it up. Sprinkle chocolate chips and butterscotch chips over the crust, followed by a layer of sweetened flaked coconut. Top it off with chopped pecans.
  4. Pour the magic. Slowly pour the sweetened condensed milk evenly over the top, making sure it covers everything.
  5. Bake. Pop it into the oven for 25 minutes, or until the edges start to turn golden brown.
  6. Cool and chill. Let the bars cool completely, then chill in the refrigerator for at least an hour. This makes them easier to cut into neat squares.
  7. Slice and serve. Slice into 16 pieces and enjoy the gooey, crunchy goodness!

Tips for the Best 7 Layer Bars

  • Use parchment paper: It makes removing the bars a breeze. No sticking, no mess!
  • Chill before cutting: For the cleanest cuts, let the bars chill fully.
  • Experiment with flavors: Try adding peanut butter chips, white chocolate, or even a drizzle of caramel on top for extra flair.

How to Store 7 Layer Bars

Proper storage ensures your Magic Bars stay as delicious as the day you made them!

  • At Room Temperature: Keep the bars in an airtight container at room temperature for up to 3 days. This works best if your kitchen isn’t too warm.
  • In the Refrigerator: Store in an airtight container in the fridge for up to a week. Refrigeration keeps the layers firm and the bars fresh.
  • In the Freezer: For longer storage, freeze the bars. Wrap each piece individually in plastic wrap, then place them in a freezer-safe container or zip-top bag. They’ll stay fresh for up to 3 months. Thaw at room temperature or in the fridge before serving.
