What You’ll Need
You’ll need the following to make these delicious Halloween cookie bars:
- Chocolate Graham Crackers – We love the extra chocolate flavor the chocolate graham crackers add but you can also use regular graham crackers if you prefer.
- Unsalted butter – The butter is what holds your bottom crust together.
- Pecan or Walnuts – You can use peanuts or almonds as a substitute if you prefer.
- Shredded Coconut – I know coconut is one of those things you either really like or REALLY don’t like (Kat loves coconut Melinda does not) but this is one of these desserts that you’re going to love even if you don’t normally like coconut. You’re just going to have to trust me on this one 🙂
- Sweetened condensed milk – The sweetened condensed milk oozes between all of the layers and caramelizes as it bakes so that it holds it all together.
- M&Ms – if you have another favorite candy, you can chop it up and use that instead.
- Candy Corn – pick your favorite kind, the pumpkin shaped ones work too!
How to Make It
Prep the oven and pan. Preheat your oven to 350 degrees F. While it heats, prepare a 13×9 inch pan by greasing it with non-stick cooking spray and then adding a layer of parchment paper on the bottom. This is a pretty sticky recipe so the parchment paper really helps when it comes to getting it out of the pan at the end.
Make the crust. In a medium sized bowl, pour melted butter over the finely crushed graham crackers and stir together until all the crumbs are coated. Spread the graham cracker crust over the bottom of the prepared pan and press the crumbs into the pan, packing it down firmly.
Layer the bars. Once the crust is firmly pressed in place, layer with the nuts and then the shredded coconut. Pour the sweetened condensed milk over the shredded coconuts evenly.
Bake, chill, and serve. Place the pan in your oven and bake for about 25 minutes or until they start to turn lightly brown. Don’t over bake the bars! Once they are done, remove them from the oven and immediately add your M&Ms and candy corn, pressing them into the bars so they stick. Allow the bars to cool completely before serving. It helps to put them in the refrigerator for about an hour before you cut and serve.
Serve with a dollop of whipped cream, ice cream, or your favorite desserts at your next Halloween get together.
What Other Ingredients Can You Use?
If you are not as big an Oreo cookie nut as I am, you might like switching the crust with either crushed graham cracker crumbs or chocolate graham cracker crumbs. Both are great options!
Halloween is a great time for candy toppings. You certainly don’t have to use the ones I picked. You can substitute the M&Ms and candy corn for peanut butter cups and Reese’s Pieces.
Or you could use your favorite candy bar or extras left over from trick or treating. Just make sure you chop them into bite size or smaller pieces.
Don’t have a bunch of candy laying around? No problem! You can make this recipe year round by using chocolate chips, butterscotch chips, and peanut butter chips.
How to Store Magic Bars
Storing magic cookie bars is as easy as making them. Place the bars into an airtight container and place a layer of wax paper between each layer so they won’t stick together. Once you’ve placed them all in the container, seal it tightly. You can keep them on the counter or in the fridge.
How Long Do Magic Bars Keep?
You can keep these seven layer bars for up to 5 days on the counter or up to 7 days in the refrigerator. You don’t have to refrigerate them, but it does help the bars keep their shape. Storing them in a warmer environment may cause them to lose some shape and they won’t last as long. Of course, you may not have the problem of where to store them if you end up eating them all in one sitting.
