I’m going to tell you a little secret, sometimes I bake things just so I can put butter on them. It’s true, a slice of toast with some creamy, salty gourmet butter on it one of my favorite quick breakfasts, and I love a good piece of french bread slathered in butter and baked until the bread is crunchy and the butter has soaked into it. Ok, now I’m hungry. These days it is so much easier to find awesome imported butter in stores. One of my current favorites is Finlandia butter.
Finlandia butter, if the name doesn’t give it away, is imported from Finland, a country known for its lush green pastures and more than 100,000 clean lakes. It is a creamy, delicious butter that is made from cows that are raised on small Finnish family-owned farms. Nothing artificial. No added Hormones. The fresh milk is carefully churned and cooled to a perfect temperature that makes it smooth and creamy. The other day I was craving some buttery goodness and Melinda and I had some fresh blackberries sitting around from another recipe we had made so we whipped up some blackberry muffins and, even though the Finlandia butter was perfect all on its own, we made a compound butter with lemon and honey. OMG, guys, you’ve gotta try this! Your tastebuds will thank you.
We used smooth and creamy, salted, Finlandia butter and we mixed it with honey and lemon zest. Then we rolled it up in wax paper and let it firm back up while we baked our muffins.
The muffins were super simple. We used a lemon poppyseed muffin mix and added fresh blackberries to it. Hey, I’m not too proud to use a mix when I’m hungry! The fresh blackberries really did add a lot of flavor to them and the lemon flavor of the muffins was only enhanced by the creamy sweet lemon butter that we put on them.
- 6 oz. Fresh Blackberries
- 1 packet Lemon Poppyseed Muffin Mix + ingredients listed on package makes 16 muffins
- 7 oz. Finlandia Butter salted
- 3 Tbsp. Honey
- 1 Tbsp Lemon Zest
Mix muffin mix together with ingredients listed on package.
Add fresh blackberries.
Pour into a muffin tin and bake according to package instructions
Sit butter out and let it come Finlandia butter to room temperature.
In a large bowl mix together butter, honey and lemon zest.
Scoop butter mixture on to a sheet of wax paper. Roll the wax paper up making a smooth tube of butter. Twist ends to seal and place in the refrigerator until fully hardened.
Whether you want to make a compound butter or just eat #FinlandiaButter straight up on a piece of toast make sure you look for it in your local grocery store…and when you find it stock up because you are going to want butter on everything! LOL
