Melinda and I have been dreaming of making these Everything Bagel Roasted Fingerling Potatoes ever since we saw them on a menu when we were in Minnesota. Everything bagel spice is one of those delicious blends of spices that has it all, garlic, onion, salt, toasty sesame seeds and poppy seeds. It’s not just good on bagels it’s pretty much amazing on everything and it took these roasted fingerling potatoes to the next level.

You can use regular fingerling potatoes for this recipe but we wanted to add a little color to our meal so we used a mix of colored fingerling potatoes including a light pink, and a deep purple that is going to make a beautiful addition to our Easter dinner table!

How Do You Make Roasted Potatoes in the Oven?

  1. Slice the fingerling potatoes in half lengthwise.
  2. In a large bowl toss your fingerling potatoes in olive oil.
  3. Sprinkle the Everything Bagel seasoning into the bowl and toss again making sure your potatoes are coated in it.
  4. Place the potatoes flat side down on a baking sheet and roast them in a 400 degrees F oven for about 30 minutes, or until a fork goes into them easily.

That’s it, just 4 simple steps! When the time is up your Everything Bagel Roasted Fingerling Potatoes come out of the oven and they are ready to go. They are quick and easy to make and perfect for a busy weeknight or your Easter dinner.

How to make Everything Bagel Seasoning

  • 1/4 cup sesame seeds
  • 1/4 cup poppy seeds
  • 3 tablespoons dried onion flakes
  • 3 tablespoons dried garlic flakes
  • 2 tablespoons coarse sea salt
  • Mix all ingredients together and keep in a sealed container until ready to use.

Ingredients

Roasted Fingerling Potatoes

  • 2 lbs Fingerling Potatoes
  • 3 tbsp Olive oil
  • 3-4 tbsp Everything bagel seasoning

Everything Bagel Seasoning

  • 1 tbsp Sea Salt
  • 1 1/2 tbsp Dried Garlic
  • 1 1/2 tbsp Dried Onion
  • 2 tbsp Poppy Seeds
  • 2 tbsp Sesame Seeds

Instructions

Roasted Fingerling Potatoes

  • Preheat oven to 400 degrees F.
  • Cut the fingerling potatoes in half lengthwise.
  • Place potato halves in a large bowl and add the olive oil, tossing potatoes until they are coated.
  • Sprinkle the everything bagel seasoning over the potatoes and toss to fully coat.
  • Place the potatoes flat side down on a baking sheet. 
  • Put the baking sheet in the oven and roast the potatoes for 30 minutes, or until the potatoes are tender.
  • Serve warm and enjoy!

Everything Bagel Seasoning

  • Put all ingredients in a container and mix thoroughly. Seal and store until ready to use. 

Notes

Note: You will have some extra everything bagel seasoning. Store it in a sealed airtight container with your other spices until you need it again.
