The secret to this fried cheese substitute is Halloumi cheese. It is a firm cheese that can be fried and grilled without falling a part. You can fry Halloumi cheese in a skillet but my favorite, easy way is to cook it in a waffle maker. I bet you never thought you’d use that again after you gave up carbs, right? Well dust off your waffle maker, turn it on and spray it well because we’re making low carb cheese waffles! While the waffle maker is heating up cut the Halloumi cheese in 1/2 inch slices. I was able to make two waffles from an 8 oz block of cheese. Place one slice in the corner of the waffle maker and close the lid.
