This easy baked fajitas are a super simple dinner recipe that I make 2 or 3 times a month. It only takes a few minutes to throw together and then it goes in the oven until dinner is served.

It makes a tasty keto friendly meal. To keep your macros in check, you can serve them with keto-friendly tortillas, on their own, or over spanish cauliflower rice

If you are not following a keto diet, you can serve baked chicken fajitas over your favorite rice, with beans, or in regular tortilla shells. Making dinner for meatless Monday? Veggie Fajitas are delicious too!

Ingredients You’ll Need

You’ll need to have:

  • Chicken breast  – Use boneless, skinless breasts cut into small strips.
  • Bell peppers – Either use a mix of colors or a single color. Make sure to deseed them and cut into strips.
  • Onion – White, yellow, or red onions all work for this, just make sure they are cut into slices.
  • Seasonings – Make your own homemade fajita seasoning. Just like our taco seasoning there are no additives or starches making this simple spice mix perfect for a healthy diet.

Instructions

To make chicken fajitas in the oven:

Step 1 – Prep the veggies. Before getting started, preheat the oven to 400 degrees F and slice up the veggies and chicken.

Step 2 – Prep the chicken. In a large bowl ,combine the chicken, pepper,and onion. Sprinkle the chicken and veggies with the fajita seasoning and toss everything together until well coated.

Step 3 – Bake the fajitas. Place all of the ingredients in a 9×13 inch casserole dish and cover with foil. You may want to spray the dish with non-stick spray to help prevent sticking.

Place in the dish in the oven and bake for 30 minutes. After 30 minutes, remove the foil and continue to bake for an additional 15 minutes.

Carefully remove from the oven and serve immediately.

You can also make them on a sheet pan!

What to Serve with Chicken Fajitas 

Chicken fajitas go great with tortillas, low carb tortillas (if you’re following a keto diet), Spanish rice, white rice, cauliflower rice, or soft or hard taco shells.

How to Store It

To store the fajitas, seal them in an airtight container and place them in the fridge for up to 1 week. 

To reheat, microwave a single portion for 2 to 3 minutes or warm in a skillet with 2 teaspoons of olive oil over medium heat for about  7 to 10 minutes or until warmed through. 

Any other information that could be helpful (only when applicable) mention that this is a keto meal if served with low carb tortillas or keto side dishes like cauliflower rice.

  • 1 medium Onion, halved and cut into slices
  • 2.5 tablespoons Fajita Seasoning

  • In a large bowl combine the chicken, pepper,and onion.
  • Sprinkle with seasoning and toss everything together until well coated.
  • Place all of the ingredients in a 9×13 inch casserole dish and cover with foil.
  • Place in the oven to bake for 30 minutes. Then remove the foil and continue to bake for 15 minutes more.
  • Serve immediately.
