These Antipasto Skewers are a quick and easy appetizer recipe that is perfect for New Year’s Eve!
Just a few more days until Christmas! This year I was super smart and I shipped most of the gifts I bought straight to my sister’s house so I only had a few presents to wrap and they are all done and tucked under the tree. I’m so looking forward to spending a few days with my family. I can’t wait to see the kids and sit around watching movies.
Once Christmas is over (and you know it is going to fly by) it’s on to New Year’s Eve. This year I’m going to a friend’s party and I’ve volunteered to bring some appetizers. There are so many good ones to choose from! I made mini lasagna rolls the other night when I was making lasagna for dinner so they are in the freezer ready to bake on party night. I’m also making these quick and easy antipasto skewers.
Melinda and I first made these a few weeks ago when we hosted a wine tasting party. They are prosciutto, fresh mozzarella, sun dried tomatoes, and a fresh leaf of basil skewered on a toothpick. Pretty darn easy and totally delicious. I think the sun dried tomato is what makes the whole thing. It has so much flavor and when you combine it with the mozzarella, prosciutto and fresh basil it is a perfect bite.

- 8 Prosciutto , slices
- 16 Ciliegine (1 inch) mozzarella balls
- 16 Sun dried tomatoes , in oil
- 16 Basil leaves

Cut prosciutto slices in half.

Fold up prosciutto and place one sun dried tomato, one basil leaf, and one mozzarella ball on top of it.

Skewer with a toothpick.
